This is the very best Vegan Coconut Bacon recipe, because it’s made with natural, plant-based ingredients and made WITHOUT liquid smoke!

Hello everyone!! I am SO. EXCITED. to share this recipe with you today. Why?! Because I’ve finally created a recipe for the PERFECT VEGAN COCONUT BACON.

Hold on, backtracking… I know that what I just said is quite a categorical statement. HOWEVER, I have been trying to find a really good vegan coconut bacon recipe for months now and haven’t found one that really worked for me. (But that’s not to say that those other recipes aren’t great!!)

The majority of vegan coconut bacon recipes on the interwebs involve some permutation of tamari, maple syrup, and liquid smoke. The tamari gives the coconut bacon salt and umami while the maple syrup adds richness and sweetness, and the liquid smoke adds (obviously) that smoky flavor. At first I was skeptical about liquid smoke, but then I read that it’s just made by collecting the smoke from burning wood, which becomes a liquid when it cools. I figured it couldn’t be that much worse than inhaling the residual smoke from the woodstove in my family’s living room.

So I bit the bullet and bought some liquid smoke, and ended up trying a few popular recipes from vegan/vegetarian blogs. The vegan coconut bacon I made from those recipes was okay, but it wasn’t that addicting, crunchy taste I was looking for. And I always followed all recipes to the T, but every time I ended up with a tray full of coconut bacon that was burnt to a crisp on the outskirts of the tray, and soggy in the center of the tray. Needless to say, I was very disappointed. Where was the crispy coconut bacon I had seen in the pictures?!

What’s more, biting into the center of the tray/soggy bacon, it was like taking a sip of liquid smoke. Maybe some people can handle that, but I felt sick to my stomach after having a few pieces. I was really grossed out, and was almost turned off to the idea of coconut bacon forever.

But I knew there had to be another way!!

My epiphany came when I saw this recipe for vegan coconut bacon on one of my favorite vegetarian blogs – A Couple Cooks. Their recipe was different from anything else I had seen online, and I was stoked to see that they used sriracha in the mix! Using their recipe as my starting point, I finally made a concoction that (I think) makes the best coconut bacon!!

What makes this recipe different is that:

1// There is no liquid smoke – the smokiness comes from smoked paprika

2// Extra Virgin Olive Oil helps crispify the bacon

3// The cooking technique ensures that no bacon is left behind, allowing all pieces to be cooked evenly!

As always, I taste-tested this baconerific masterpiece on some non-vegan friends (this time, three very hungry non-vegan dudes), and they absolutely LOVED it. I think my friend described it the best – “It doesn’t really taste exactly like bacon, but there’s something about it that makes you want to have another piece.” I’m not going to lie to y’all and say that this is a perfect carbon copy of bacon. Instead, it’s a CRISPY, UMAMI, SLIGHTLY SPICY, SMOKY, and TOTALLY SATISFYING bite of heaven.

I hope you guys all love this recipe as much as I do… I’ve literally spent months perfecting it!!

Vegan Cobb Salad w/ Coconut Bacon

Made with all-natural ingredients, this unique coconut bacon is crunchy, savory, slightly spicy, and completely addictive! This coconut bacon is made without liquid smoke.

Ingredients
  

Coconut Bacon

  • 2 Cups Coconut Flakes not shredded
  • 2 Tbs Extra Virgin Olive Oil
  • 2 1/2 Tbs Tamari
  • 1 1/2 Tbs Sriracha
  • 2 Tsp Maple Syrup
  • 1 Tsp Smoked Paprika

Cobb Salad

  • Baby Kale
  • Cherry Tomatoes Halved
  • 2 Avocados

Red Wine Vinaigrette

  • 1/4 Cup Extra Virgin Olive Oil
  • 2 Tbs Red Wine Vinegar
  • 1 Tsp Dijon Mustard
  • 1 Tsp Maple Syrup
  • Salt + Pepper to taste

Instructions
 

Coconut Bacon

  • Preheat oven to 350 degrees F.
  • In a bowl, combine coconut flakes, olive oil, tamari, sriracha, maple syrup, and smoked paprika, and stir well. For a richer flavor, let coconut flakes marinate for a few minutes.
  • Place coconut flakes on a tray lined with parchment paper. Try to evenly space out the coconut flakes as best you can - aim for the least amount of overlap possible.
  • Once oven is at 350, bake coconut bacon for 5 minutes.
  • After five minutes, take coconut bacon out and stir well. Once coconut bacon is evenly spaced again, put the tray back in the oven.
  • After the previous step has completed, keep baking coconut bacon FOR TWO MINUTE INTERVALS, STIRRING AT EVERY INTERVAL. This step is crucial! It prevents the coconut bacon from cooking unevenly.
  • In total, your coconut bacon should bake from anywhere between 10-15 minutes (including the first five minute bake). However, this time may vary based on your oven. Be sure to always take the coconut bacon out and stir EVERY TWO MINUTES. And be careful - it can burn easily!

Red Wine Vinaigrette

  • Either in a blender or in a bowl, combine all vinaigrette ingredients and blend (or whisk). Adjust salt and pepper as needed.

Cobb Salad

  • I didn't provide exact measurements here because this salad is so easy and forgiving to make. Assemble a bowl full of baby kale (or iceberg lettuce / romaine if you're a traditionalist!), cherry tomatoes, and avocado. Toss with as much vinaigrette as desired, and top with coconut bacon.
  • Enjoy!

    This looks like the coconut bacon of my dreams! I have always been tempted to make coconut bacon, but the closest I’ve experimented with is bacon-like tempeh (totally not the same, but similar flavor). I have always been weirded out by liquid smoke and even though I bought some, I barely use it. Smoked paprika is so delicious, and I love that you’ve used it here. I’ll absolutely be trying this recipe out!

    I’m not a fan of liquid smoke at all so I’m so excited to see a version of coconut bacon that uses other flavours to get that sweet/spicy/smoky combination plus I have all of the ingredients on hand!

    Beautiful recipe, Sarah! I have to confess, I’ve never been a fan of bacon. The smell of it even makes me run away {#sorrynotsorry} and the thought of what it is is even worse… But your coconut bacon looks sooo delicious and by the way you described it it’s got all the flavors I absolutely adore — maple, tamari, smokiness, paprika, sriracha heat — I love all of this. You may have convinced me to give this coconut bacon craze a try :)

      The best thing about it (in my opinion), is that coconut bacon is delicious in its own right, without tasting just like bacon. What it tastes like (to me) is coconut flakes marinated in maple syrup, tamari, paprika, olive oil, and sriracha. Which is what it is!!       Hey Donice! You can find flaked coconut in the baking aisle! It’s definitely at Whole Foods, but you can also find it on Amazon, or even at Walmart! You can buy it raw or toasted, either variety works (I’ve tested this recipe with both ;) )

    Looking forward to trying this recipe. The one I have used works with oyster mushrooms and turns out pretty well. But I always like trying variations.

    Also, IMHO on the comment that this recipe isn’t a carbon copy of the real thing – most vegan things are not. A mistaken way of describing vegan dishes is to assure our meat-eating friends that our non-meat versions taste “just like the real thing”. (I am not implying that is what our chef did here did at all! Rather, she just asked them to taste it to see if they liked it – which is a great way to do it.)

    What has worked for me is a very similar approach so that when asked, responding with – no, it won’t taste like meat because it is not meat. Just taste it for what it is, and see if you like it. Once the person changes their frame from expecting a meat consistency and flavor, they typically enjoy what is presented to them and want more.

      I really appreciate your insight, CJ! That’s actually a point my boyfriend brought up with my raw brownies – they don’t taste exactly like traditional brownies, but then again they’re not supposed to. He thought that calling them “brownies” would be misleading, but I think it’s helpful sometimes to name things in a familiar way so people can have a point of comparison. But I really like your way of introducing vegan foods! When I made this recipe for my friends, I didn’t tell them what it was called at all, actually! I just said, “Try it, it’s really good.” :D And they all loved it!

    I just came across your blog and I’m obsessed….especially with this recipe!! I often don’t make the recipes I pin (i have a feeling it’s a common thing), but I MUST make this ASAP and see what my dad (a vegan) & brothers (not vegan) think! ((and I’ll totally report back!))     As soon as I saw this post had Vegan Bacon in it, I dived into it and imagined a loaded baked potato with it. Yummm! If I had a salad like this, half of it would be covered in vegan bacon, seriously. Isn’t it nice when non-vegan friends are willing to be our taste-testers. When my friends first tried some of my kale chips I made, they glared at them in curiosity and then took a bite of one and liked it. That was a nice feeling; score! I love how the coconut bacon looks so crispy to perfection! That’s food porn right there.

    Sarah your photos and recipes are just incredible! All these close-ups make me want to dive so badly! I used to love cob salad, but haven’t attempted the coconut (or any vegan) bacon thing yet. Your recipe really does sound perfect: salty sweet, smokey, and my fave spice paprika <3 I have a feeling anything would be amazing with that bacon sprinkled on top :)

    How could your gorgeous photos not catch my eye?! And I’m sure glad they did. I tried your recipe tonight with great success! Thank you for all the effort you devoted to developing your own twist on coconut bacon and generously sharing it. The bacon had a zingy flavor and crispy-fun texture (yay for NO liquid smoke). Not only that, but you have written clear, non-fussy directions. I definitely will make this recipe again.

    Since you have requested feedback as you debut your recipe, I do have a couple of notes about amounts. First, I halved the bacon which seemed to be just the right amount to top two very generous entree-sized salads. I do like your idea of keeping some extra on hand for other uses… Also, if I make such large salad portions again I probably will double the amount of dressing since my husband tends to go a bit heavy on “the sauce”!

    This looks absolutely amazing, Sarah! I haven’t made coconut bacon before (in fact, I was always too lazy to track down liquid smoke) – so now I’m really glad to have found a recipe that looks so straightforward!     What a great recipe you found from them, I have never seen siracha on coconut bacon either before! I have to admit, I hated coconut bacon when I tried it. It wasn’t crispy, was way too chewy and well, it tasted like coconut, lol! I do not like eating just straight coconut, so it wasn’t for me. BUT I’m intrigued to try this version now…I love the flavors you added and the salad looks absolutely mouthwatering! Just beautiful!

    Lawdy, Lawdy, this is good! I did it without the maple syrup and Black Rose Hot Sauce because I didn’t have any Sriacha. By the time it’s done in the oven, there won’t be anything left. I’m serious.

    so happy to find a recipe without liquid smoke! I’m planning on making this for my bf as a birthday loot bag, and he liquid smoke and LOVES smoked paprika and sriracha so this should be a success!! Have you tried making it with coconut chips instead of flakes? they look the same just are cut a little thicker- I’m wondering if the marinate would get soaked up?

      Hmmm…. I’ve never tried this with coconut chips but I think if you marinated them for a little longer than the recipe calls for, they would soak up the seasonings pretty well! :)
