There’s a lot of hype around veganism – it comes with the territory. And I suppose like every other “movement” (or philosophy or idea or what have you), there are different “types” of vegans… like the ethical vegans, the hippie vegans, the weight-loss vegans, the health vegans, the I’m-only-doing-it-because-it’s-trendy vegans, etc. And probably a lot more in between. I’d probably categorize myself as a ethical-hippie-health vegan. But honestly, F the labels. Whatever the reasoning behind our choices, veganism is one of the most ethical, environmentally-friendly, and healthy lifestyles out there. Personally, I’ve never been one to proselytize or try to convert others in an unwarranted way. I think the best way to spread awareness about veganism is to talk about it (respectfully, always) when asked, and to cook delicious vegan food for my friends so I can sneakily convert them anyways (hehehehe).  And surprisingly, it works! My mom now loves delicious vanilla almond milk in her morning coffee rather than the heavy coffee creamer. And my guy is probably 60% pescetarian now, which is a huuge step. It means so much to me when the people I care about take the time to actually learn why I’m vegan instead of automatically judging this choice.

But unfortunately, the rest of the world isn’t so open-minded. Although veganism is definitely becoming more mainstream, the amount of ignorance out there is just unbelievable. I swear, if I had a dollar for every time I was asked, “But.. but… where do you get your protein from?!”, I would have enough money to publish a pamphlet on plant-based protein sources and send it to every person in the world. I’m really trying to be patient with these questions, really, but my responses are starting to get a little snarky. Just recently an acquaintance asked me where I get my protein, in response to learning I was vegan. The conversation went something like this:

Them: “You’re vegan? But where do you get your protein?!”

Me: “I don’t. There’s literally nothing I can get protein from except for animal products so I just don’t eat any protein.”

Them: “Whh…what?”

Me: “Yep. I’m a medical miracle.”

Face. Palm.

But on the real. Even my mom, who is a very intelligent person (and a Registered Nurse) asks me every time I see her if I’m getting enough protein. I know she’s just worried about my health, but there are so. many. places. where you can get protein that don’t involve animal products. For example:

1// 1 Cup Lentils (cooked) = 18g Protein

2// 1 Cup Edamame = 17g Protein

3// 1 Cup Chickpeas (cooked) = 15g Protein

4// 1 Cup Black Beans (cooked) = 15g Protein

5// 1 Cup Quinoa (uncooked) = 24g Protein

And that’s not even taking into account protein smoothies / supplements, which are pretty darn awesome if I do say so myself.

So that’s my little rant about protein/veganism. And it’s probably a little ill-timed because this isn’t my most protein-heavy recipe ever, but this raw noodle bowl is deliciously light and healthy, especially for the summer months. I bought these beautiful rainbow carrots at the farmer’s market and was so inspired by the vibrant colors! It’s paired with a delicious miso & tahini dressing that has so much umami that my taste buds almost fell off. I hope you all love it as much as I do!

Raw Noodle Bowl w/ Miso Tahini Dressing

This raw noodle bowl is light and refreshing for summer, paired with a delicious miso tahini dressing that's full of umami!

Total Time 10 minutes

Ingredients
  

Noodles

  • 3 Medium Tricolor Carrots
  • 2 Daikon Radishes

Miso Tahini Dressing

  • 2 Tbs Water
  • 1 Tbs Tahini
  • 1 Tbs Tamari
  • 1/2 Tbs White Miso
  • 1/2 Tbs Rice Wine Vinegar

Toppings

  • Sesame Seeds
  • Kale optional, finely chopped

Instructions
 

  • Wash and lightly peel 3 medium carrots + 2 daikon radishes.
  • Spiralize noodles using your spiralizer.
  • In a bowl, whisk together dressing ingredients until fully combined. Taste and adjust as needed.
  • Toss dressing with noodles, adding as much as desired.
  • To serve, sprinkle bowl with finely chopped kale and a few sprinkles of sesame seeds.
  • Enjoy!

Notes

The miso tahini dressing is slightly thin, which is how I like it. If you'd like to make yours a bit more substantial, add another tablespoon of tahini for a thicker consistency.

    This looks so refreshing! There’s a raw vegan restaurant near me that makes a fantastic Asian noodle bowl – I bet yours is similar! Need to try it out so I can save myself the $13 every month :)

    Wow! This noodle bowl looks incredible- those colors! I didn’t realize they were actually carrots until I saw the ingredient list, looks just like pasta. I’ve never tried carrot noodles before but am really inspired to after seeing this. Great recipe!

    I’m not full vegan, although 90% of my meals are (the other 10% being vegetarian), but I totally agree with everything you say about veganism. In fact, you made me spit out my coffee from laughing describing telling a person that you don’t eat protein! I have done the same thing!

    Hahaha Sarah! You’re a sass master! I agree it’s hard to be patient when it feels like everyone thinks being vegan is some radical choice. Just yesterday, I was at a bakery for lunch and just about every food they had had butter and/or cheese (#Vermontproblems). I asked if anything was vegan, and the girl at the counter said “Will gluten-free work?” Face palm moment of my own. So produce it was. ‘Twas way better than a cold-cut sandwich anyway. :)

      Hahaha because of course, vegan and gluten-free = the same thing. But hopefully as veganism becomes more and more mainstream, the silly questions will end. Sigh. A girl can dream!! ;)

    Hi Sarah,
    These “noodles” look so pretty. I am recently really getting into tahini, so I’m excited to try your dressing. I went to an all vegetarian school growing up, so I am well versed in the type of questions you are getting. Growing up I was always surrounded by people who didn’t eat meat and understood that way of eating from a nutritional perspective. However, whenever we went on vacation or to visit relatives etc… we were bombarded with the types of questions you related.
    Now I’m off to the kitchen. I Just got back from the farmers market with my bags full of deliciousness!

    I love this! I’m not 100% vegan myself but I also get that question a lot. There’s protein in so many plant based foods, it’s a lot more easier than what most people think to get enough.
    I love how simple yet delicious and refreshing this bowl sounds! Tahini + miso is a match made in heaven!

    And THAT question… I think the frustrating part about questions like that is that they often literally mean nothing to the person asking them… Like most people have no idea how much protein they themselves are eating — it’s just become such an autopilot question…

      That is such a good point, Audrey. I highly doubt any of these inquisitive non-vegans actually care how much protein we eat, nor are they even aware of their own protein intake. *Sigh* One day the silly questions will stop. Maybe. ;)

    I love the flavors in this dish. As for your words on veganism – as with everything, a sprinkle of grace and patience goes a long way ;) I’m sure I make lots of people want to smack their heads with things I don’t know every day (haha).     This looks absolutely delicious! I love anything with tahini. And I always get the protein question too, which is quite funny. But I usually view it as an opportunity to debunk the myth that protein only comes from meat!

      That’s such a great attitude to have! I didn’t mean to portray myself who snarkily responds to anyone who asks where I get my protein from… to the people who have genuine intentions in asking, I love explaining about vegan sources of protein. Other people just like to ask it to push buttons, so they have it coming ;)

      I’m really glad you can relate, Laura! I’ve been worried that I’ve come off as a total meanie in my little exchange I wrote about, but the questions just seem never ending! And the worse part is, the guy who asked me literally had NO concern about my actual health – he just wanted to push my buttons. But this gal’s buttons will NOT be pushed #GIRLPOWER ;)

    Since surely 1 year I want to try a raw noodle bowl. I have seen so many wonderful recepies that always speak to me.
    The fact that you use tahini is just the cherry on the top. I love tahini and eat it very often. I usually combine it with eggplant. I will definitely try your miso-tahini dressing… looks delicious
