Today’s recipe is nice and simple – just some plain banana ice cream, and some yummy chocolate rawnola. Sometimes the simplest things are the best, especially when life is complicated. Right now I’m trying to figure out what I want to do once my leave time is over. I’m definitely going to go back and get a certification in holistic nutrition, but the “when” of it is what’s up in the air. Right now I’m juggling what I should do for work, what I should do for my education, and where I should live. It’s been getting a little stressful, so having my cooking and my blog to turn to is such a relief. The goals here are really simple – make yummy food, write about it, post it.

As I’ve been playing around with raw foods lately, I’ve been having a fantastic time trying to raw-ify my favorite snacks – like kale chips, granola, fruit leather, etc. I don’t have a dehydrator, but I’ve found that my oven works just as well on its lowest temperature. Today’s raw granola, or rawnola as I like to call it, was super simple to make, with only six ingredients. I taste tested it on my non-vegan friends, and they both loved it, especially with the banana ice cream. It’s so cool how bananas take on such a creamy and luscious texture when frozen! With the crunchy rawnola, it’s a match made in heaven!

Banana Ice Cream w/ Chocolate Rawnola

Creamy banana ice cream pairs perfectly with chocolate rawnola in this easy, delicious breakfast bowl!

Ingredients
  

Banana Ice Cream

  • 4 Frozen Bananas sliced
  • Drizzle Raw Agave optional

Chocolate Rawnola

  • 1 1/2 Cups Oats divided in half
  • 6 Medjool Dates
  • 1/3 Cup Pepitas
  • 2 Tbs Raw Agave
  • 3 Tbs Raw Cacao Powder
  • 2 Tbs Water

Instructions
 

Banana Ice Cream

  • To make banana ice cream, add frozen bananas and agave into food processor, and process until a smooth and creamy consistency is reached.
  • If desired, put banana ice cream back in the freezer for a few hours for a harder texture is reached. For a soft-serve style ice cream, serve immediately.

Chocolate Rawnola

  • Add medjool dates and half of the oats into the food processor, and process until oats are finely chopped.
  • Add date and oat mixture to a bowl, and add all other ingredients. Mix by hands until all ingredients are evenly combined.
  • Either serve granola as is, or dehydrate in the oven at the oven's lowest temperature for one and a half hours.
  • Enjoy!

    Simply stunning photography! I love the idea of ice cream in winter time too. Usually it’s just hot drinks or warm desserts but I am an ice cream fan, and I love how this is on the much healthier side! Good luck trying to figure out what you’re next career steps are. I’m sure you will know where you are supposed to be soon!
