The inspiration for today’s recipe was borne out of the fact that I don’t have any overnight oats recipes on this blog, but it was about damn time I posted one. It’s funny, I feel like I’ve posted so many recipes to this space (120 to be specific), but there’s still so much I haven’t done. For example, I don’t have a popsicle recipe. No pizza recipes. And a troublesome scarcity of snacking recipes. Which, to be honest, is almost criminal – because snacking is probably my favorite hobby. No matter! I shall rectify these matters immediately, starting with my overnight oats recipe today.

These blueberry overnight oats are a great way to have a complete and nutritious breakfast, packed with fiber and nutrients, but for anyone who doesn’t have time to cook a big breakfast in the morning. I love oats because they’re such an underrated nutritional superstar. They’re a great source of the minerals manganese, selenium, and phosphorus, and are also a fantastic source of soluble dietary fiber. This type of dietary fiber is important because it binds to bile acids in the small intestine and removes them from the digestive system. It’s also worth mentioning that this type of soluble fiber helps lower your bad cholesterol levels (LDL), by reducing its absorbability into the bloodstream. Who knew that oats were so amazing? So when you dig into a bowl of these delicious blueberry overnight oats, you’ll also be nourishing your body in the best possible way.

Blueberry Overnight Oats

These blueberry overnight oats are a breeze to put together, made with fresh blueberries, creamy banana, and just a hint of cinnamon. A complete and nutritious breakfast!

Ingredients
  

  • 1/2 Cup Blueberries
  • 2/3 Cup Almond Milk
  • 1/2 Banana
  • 1/8 Tsp Cinnamon
  • 1 Cup Rolled Oats

Instructions
 

  • In a blender, combine blueberries, almond milk, 1/2 banana, and cinnamon. Blend until smooth.
  • In a bowl, combine blueberry mixture with oats and mix well, until oats are evenly covered.
  • Spoon oats into small jars (I used mason jars). Cover, and leave overnight in your refrigerator.
  • In the morning, heat oats up in the microwave and serve with almond milk, berries, and coconut flakes (if desired).
  • Sweeten with a little maple syrup or honey if you like.
  • Enjoy!

    I can totally relate to this! I have maybe 2 cake recipes on my site, what?! I’m starting to think about my birthday cake so I’ll be adding one more soon :) Love a good overnight oats recipe!

    love oats in general…and overnight is the way to go for me as well. i havent made one in a long time, needs to change that.

    When I discovered overnight oats, I was in my early 30s. I wondered where in the world they had been all my life! They are the ultimate fast food – grab and go on those busy mornings. Now between overnight oats, porridge and chia pudding, I don’t even have to think about breakfast in the morning! It’s always ready! (save the weekend pancakes and waffles!). This is so delicious and perfectly in season! It’s soooo good! Have a beautiful weekend!

    The simplest of breakfasts are most of the time, the most delicious! Is it weird that sometimes I eat my oats cold in the morning? Especially now on hotter days. Either way, they’re always a good breakfast.

      Well first, congrats on becoming vegetarian!! You are taking a great step towards helping your health + the environment. :) The oats are soaked in the banana-blueberry mixture overnight to soften them, and also for convenience sake… You can prep them at night and have them ready to go in the morning! :) Thanks for stopping by Valeria!

    Oh you don’t have to sell me on oats – they’re amazing stuff. Although, if I did need convincing, this recipe would certainly do the trick! That colour is absolutely gorgeous and blueberries and oats together are so delicious.

    Any recommendations on other milk to use? I think i may be allergic to almonds (skin reaction) so almond milk won’t work, but I understand that almond milk has a good consistency for overnight oats, any thing else similar that would work?

      I would try rice milk or coconut milk!! Both would work just fine :)

    Hi these sound great but can you cook them on the hob just like porridge?
