This Vegan, Hearty Pumpkin Beer Stew is the perfect meal to eat while watching football on a chilly fall night! (This is coming from direct experience, by the way!)

So I’m pretty sure that the world is ending today. Why? That’s right, you guessed it – it’s Election Day 2016. I try not to talk about politics here because I want to create a safe space for people of ALL backgrounds, beliefs, and ideologies. But it’s pretty certain that everybody agrees this election has been particularly bad. Opinions are more polarized than ever, and we’re stuck choosing between someone who’s pretty bad and someone who’s REALLY BAD (and I think we all know who is who, but for the sake of #unity I’m not going to say). Overall, this whole thing really sucks.

My advice on how to get through it? Put some booze in your food.

I jest, of course. Alcohol doesn’t solve problems. But a bowl of delicious, warming stew might. And if it happens to have beer in it, well, that’s just the way it goes! ;)

So here’s my REAL advice – make a bowl of this pumpkin beer stew, disconnect from TV / computers / phones, and enjoy it with someone you care about. Because, in the end, the only thing we have direct control over is how WE act. Someone will be elected president, and time will keep marching on. No matter who it is, we’ll have to keep on living our lives. So I say make the most of it, and make this pumpkin beer stew. Harvest Pumpkin Beer Stew

Not a soup and not a chili, this pumpkin beer stew is a perfect mash-up. Made with organic pumpkin purée and IPA, this stew is warming and hearty.

Ingredients
  

  • 1 Medium White Onion
  • 1 Red or Orange Bell Pepper ribs and seeds removed
  • 1 Medium Jalapeno ribs and seeds removed
  • Extra Virgin Olive Oil for cooking
  • 15 oz Diced Tomatoes canned
  • 1 15 oz Can Black Beans drained and rinsed
  • 1 15 oz Can Kidney Beans drained and rinsed
  • 1 15 oz Can Pumpkin Puree
  • 1 Cup Vegetable Broth
  • 1/2 Cup IPA Beer
  • 1/8 Cup Cilantro or less, to taste, minced
  • 1 Tsp Salt or more to taste
  • 2 Tsp Chili Powder
  • 1 Tsp Cumin
  • 1 1/2 Tsp Smoked Paprika
  • 1/2 Tsp Chipotle Chili Powder
  • 1/2 Tsp Garlic Powder

Instructions
 

  • Start by prepping your veggies - chop the onion, remove ribs and seeds from pepper and jalapeno and chop them up.
  • Bring a large pot to medium heat on the stove with a drizzle of extra virgin olive oil.
  • Once oil is hot, add onions and saute until semi-translucent.
  • Then, add in the chopped bell pepper and jalapeno, and stir for about 2-3 more minutes.
  • When veggies are soft, add in black beans and kidney beans and give them all a good stir.
  • Then, add in pumpkin puree, broth, IPA, cilantro, and spices, stirring until everything is evenly mixed.
  • Let stew simmer for about 10 minutes, so the flavors can all really meld. Taste, and adjust seasonings if necessary.
  • When done, remove stew from heat and serve in bowls or mugs.
  • Top with fresh cilantro, if desired.
  • Enjoy!

    Both my boyfriend and I don’t like beer, but this stew looks gorgeous!
    Btw, I don’t like both the candidates, but know what, I’m not American, I won’t live here for a long time – I hope so – so I’m not really so scared and I’m pretty sure you’ll be able to survive this. We have such a long story of bad politicians in Italy….I’m kinda used to this kind of bad situation ;)
