I wanted to make this post about Valentine’s Day, about having the perfect date night with your sweetheart, about delicious soup and beautiful wood watches. But I feel called to say a few words on the situation in our country right now. There is so much hate and intolerance in our current administration. As a Christian, I cannot stand idly by while those in need are rejected from the safety of our country. Matthew 25:35-40 specifically comes to mind.

While I will definitely being speaking more on these issues in upcoming posts, I want to transition into talking about positive things – things like love and Valentine’s Day and cooking for people you love. I know a lot of people don’t like Valentine’s Day…. “you don’t need a specific day to show love”, they say. And they’re absolutely right, you don’t. But I personally think that it’s nice to have a day set aside to appreciate and spend time with the person / people you love.

A way that I show love is by cooking for people. It’s an act of service, to feed someone else, to nourish their body and soul with a delicious meal. That’s where this Date Night Soup comes in. I wanted to make something warming – literally – for the heart and body. It would be perfect for a date with your significant other, your best friend, or even your mom or dad! And taking only 30 minutes to throw together, it’s a no-fuss Valentine’s Day meal that is sure to impress.

Date Night Soup | For Valentine's Day

This date night soup is the perfect meal to make your sweetheart for Valentine's Day - it's easy to throw together, delicious, and will warm up your evening!
Prep Time 15 minutes
Cook Time 15 minutes
Total Time 30 minutes

Ingredients
  

  • Extra Virgin Olive Oil for sauté
  • 1 Yellow Onion diced
  • 2 Stalks Celery diced
  • 3 Cloves Garlic minced
  • 2 Sprigs Fresh Thyme just the leaves
  • Juice from 1/2 Lemon
  • 4 Cups Vegetable Stock
  • 2 Cups Water
  • Salt to Taste very important!
  • 1/2 Tsp Pepper
  • 1/4 Tsp Coriander
  • 1 Tsp Dried Parsley
  • Pinch Cayenne optional
  • Cooked Pasta between 2-3 cups, to serve
  • Fresh Herbs if you like, to serve

Instructions
 

  • Bring a soup pot to medium heat with a glug of olive oil.
  • Add in diced onion and celery, and sauté until onions are soft, about 5-10 minutes.
  • Then, add in minced garlic and fresh thyme leaves and sauté for another 1-2 minutes, until garlic is fragrant. Be careful not to let the garlic brown!
  • Then, add in lemon juice, vegetable stock, water, and spices. Add salt to taste - this is very important!
  • Once everything is added in the pot, let simmer for about 15 minutes, so the flavors can really meld.
  • When done, serve soup over cooked pasta. I used heart-shaped noodles, but you can use any type you like! I wrote 2-3 cups in the recipe, but you can really use as much or as little pasta as you like. Cooked rice or grains (like wheatberries or spelt) would be great too!
  • Serve with fresh herbs if you like - I used a little parsley and some sprouts.
  • Enjoy!

    I too am all about acts of service/showing love through cooking. That is why I almost always cook whatever my fella asks me to, or why I’ll stay up late packing his lunch even if I’m exhausted. Some may call it quaint or outdated or regressive….but I find joy and fulfillment in such acts.

    Forget all the cutesy, pink, chocolate-covered Valentine’s day foods floating around right now, heart-shaped noodle soup is so subtly sweet and Valentine’s perfect!! Nourishing food that actually makes you feel all warm and fuzzy inside–you nailed it :)
