Full disclosure – I love everything about this post today! This recipe is one of my favorites – I love anything with noodles/pasta/well-actually-just-carbs, I love how delicious and healthy this is, and I love Le Creuset. Quick sidebar – when I started this blog back in May 2015, I said it would be my dream to work with Le Creuset and Vitamix one day. And today, I get to check one of those dreams off the list!!

The reason I wanted to work with Le Creuset is not only because they’re French (and I’m a serious Francophile), but because their products are the best. I use their bakeware in my kitchen all the time, and they’ve been nothing short of amazing for someone who cooks for a living. Even though before this post I had never tried their nonstick cookware, I knew it would be absolutely top-notch. And it was! Literally NOTHING stuck to that sauté pan, which made the cooking and clean-up processes a breeze. Let’s just say my old pan from Walmart didn’t really compare. (Also, I should mention that Le Creuset didn’t tell me to say any of this – I’m genuinely this excited about their products!!)

Spicy Green Tea Noodles

These spicy green tea noodles are stir-fried in a fragrant and beguiling sauce with hints of sesame, spicy sriracha, and ginger.

Servings 2 as a Main, 3-4 as a Side

Ingredients
  

Green Tea Noodles

  • 7-8 Oz Green Tea Noodles
  • A Neutral Oil like Sunflower Oil
  • Shavings from Two Large Carrots
  • The Green Parts from 3 Scallions chopped
  • 1/2 Cup Shelled Edamame

The Spicy Sesame Sauce

  • 2 Cloves Garlic
  • 6 Tbs Strongly Brewed Green Tea
  • 2 Tbs Shoyu or Tamari
  • 1/2 Tsp Toasted Sesame Oil
  • 1/2 Tsp Sriracha
  • 1/4- Inch Square of Fresh Ginger
  • The White Parts of 1 Scallion
  • 1/4 Tsp Black Pepper
  • Salt if needed, to taste

To Garnish

  • Sesame Seeds
  • More Chopped Scallions
  • Cilantro if you like cilantro

Instructions
 

  • Start by cooking the green tea noodles according to the package's instructions.
  • While noodles are cooking, make the sauce - simply combine all sauce ingredients into a blender and blend on high until everything is smooth.
  • When noodles are done, drain and set aside.
  • Prep the veggies - chop the scallions, de-shell the edamame (if needed - I bought my pre-shelled), and peel the carrots. I used a vegetable peeler to make carrot "ribbons".
  • Bring a Le Creuset nonstick pan to medium heat with a little neutral oil (like sunflower or grapeseed). Once oil is hot, add in edamame. Stir-fry for 1-2 minutes, or until edamame gets a tiny bit brown on the bottom.
  • Then, add in the cooked noodles, carrots, and chopped scallions. Mix everything together well in the pan.
  • Pour in the sauce over the noodles and mix well. Stir-fry everything for about 5-7 minutes, completely depending on how brown you want the noodles to get. I like my noodles to get a bit crisp, so I stir-fried them for longer.
  • Serve the noodles in bowls, garnished with sesame seeds, cilantro (if you like), and more scallions.
  • Enjoy!

      You can get them at Asian Markets and at some Whole Foods! If not, you can just sub with any other noodles :)

    I’d love to try to make carbonara with Le Creuset dishes. I always have to scrape the bacon/pancetta goodness off the bottom of the pan with normal pans and I’m missing all that amazing flavour! I’m getting married this year and this would be an AMAZING thing to add to my kitchen. :)

    What would I make with it? well just about everything that I can. I have an earth pan that needs replacing really bad and everything sticks to it even though its supposed to be none stick. :( I think I will make your recipe first though because this looks so delicious and comforting. :D

    Love the flavor of Green Tea and these Spicy Green Tea Noodles look delicious! Le Creuset has amazing cookware and it would be perfect to caramelize mushrooms and tofu with some Gochujang and other Asian staples from my pantry.

    All of your recipes are amazing and I can’t wait to try this one out!! I am also a huge fan of Le Creuset and in love with all of their cookware! What I would do with their non-stick pans is either make pasta puttanesca or pancakes!

    I would use it most probably to cooks eggs for breakfast. I’m currently trying to use less butter and oil and the nonstick pan would be awesome for that! I’m sure it would become my new favorite pan I would be cooking everything in it! I have a Le Creuset Dutch oven and I love it and use it just about most everyday for soup, stews , cooking pasta , frying. It’s awesome!

    I would use this to make the ultimate omelette! I too am slowly getting rid of my old Walmart pans from way back in college, and replacing them with pieces to last a lifetime. Think Le Creuset fits the bill!

    I just saved the green tea noodles recipe to try this weekend. It looks so lovely and delicious!!! I don’t own any Le Creuset pieces (I would love to!!!). Chicken tikka masala is one of my most favorite meals, so I’d definitely make that in a fabulous Le Creuset pan if I was lucky enough to win one.

    This recipe looks and sounds phenomenal! Can’t wait to try this out! I love the Le Creuset line and would love to actually be an owner of a piece or two.     I am on a ramen kick right now starting with the fire rooster new year and I had a gorgeous ramen in Brooklyn on Saturday that surprised me with lovely green noodles. It was so delicious and yours looks fantastic. Can’t wait to try it! I would like to make some dal in that nice Creuset!

    This sounds so bright and delicious (which is exactly what i feel like i need lately!)
    I have ruined more than one non – nonstick pan cooking eggs and attempting to sear various vegetables so I would probably attempt eggs and/or an omelette in the beautiful cookware!

    I love Le Creuset! I used to work in a high end kitchen store and sell so much of it! In a way I’m glad I could never afford it because I could never narrow down a colour choice haha. I would love to fry up some big fat perogies though! Cook up some bacon first and fry them in the fat! Ohhh now I’m hungry!

    Ooooh, Le Creuset! I’ve never had anything from them (yet!), but would love to so much! And would would I make? Well, a whole lotta things, I love roasting :). Now, in the season, I’d saute Brussels sprouts with apples and fresh thyme. I love the taste of it and different textures, and the carmelised smell of apples… It a perfect match! What else – all the stews with Buttenut squash, red lentils, kale and coconut milk – so warming, hearthy and delicious! And then… Your noodles.     These noodles sound amazing, I can’t wait to try them! And I would make chickpea pancakes/socca on the non-stick pan…no matter what I do, I always end up with half the batter stuck to the pan, eeeek! Also that cocotte is adorable :)

    Beautiful photo of a beautiful dish, so simple and so delish! That’s why I love non-stick pans – they just make everything easier and tastier :). I’d love to try my favourite Dutch Baby (made with chestnut flour, because I’m gluten intolerant) and socca made on it!

    I would love to make cauliflower or red cabbage steaks, especially for these cold days… Then serce them with simple tahini-lemon-garlic sauce and some quinoa… Or some quick and healty one-pan dish like coconut milk cauliflower rice with curry spice, butternut squash or sweet potato, some carrot, red bell pepper and peas… Yummy, quick and warming :).

    As a newcomer to your blog, I am now hooked! Our household has been serving up the same (healthy and delicious) menu of dishes for the past couple of years. However, your dishes are a refreshing and exciting new add to the fold! Your efforts have greatly impacted our household dinner time in a very positive way – we truly appreciate the new recipes!

    This recipe looks so yummy, but I have what is going to sound like such a dumb question. Here it goes.

    When you say strongly brewed tea, do you mean we should use extra tea leaves and steep the normal amount of time OR, use the normal amount of tea leaves and steep for a longer time? Also, I was wondering if you could give some tips on that? Thanks! I can’t wait to try this!

      Hi Rachel,

      Not a dumb question at all! You could do either method that you listed, as long as the tea is stronger than usual! What I did for the recipe is take a cup of hot water, and steeped two green tea bags in it for about 5-7 minutes. I hope you love the recipe!
