Today is a quiet day; one of reflection. I’m humbled in the face of our broken world. The Paris attacks that occurred on Friday were unspeakably horrifying. Sobering to all humans across the world. None of those people in Paris, that day, had any idea that they were about to be faced with unimaginable terror and violence. My heart grieves for the mothers and fathers, sisters and brothers, friends and loved ones left behind to mourn their dead. I take heart knowing that the innocent souls are now joined with Christ in Heaven – where their suffering will be gone and their hearts at peace.

Today, I invite all of you to show gratitude to those in your life. Hold your loved ones a little tighter. Tell your mom that you love her. Spend time with your family and friends, savoring the moments you have with them.

Our world will never change unless we change. Whether you believe in God, a great spirit, or a higher power, let us invoke the blessing of the divine –

May we all contribute to a world of kindness and compassion. Let our hearts be pure in our love. Please, Lord, let our world know peace.

Matcha Mint Tea | Well and Full

Matcha Mint Tea

This homemade matcha mint tea is calming and refreshing, full of natural antioxidants and polyphenols to give your immune system a boost.

Prep Time 5 minutes
Cook Time 5 minutes
Total Time 10 minutes

Ingredients
  

  • 6 Stalks Spearmint
  • 3 Cups Water
  • 3 Tsp Matcha
  • 1 Cup Almond Milk
  • 3 Tsp Honey or Maple Syrup

Instructions
 

  • In a pot, heat 3 cups of water. DO NOT bring to a boil, it will cause spearmint tea to be bitter!
  • Once water is hot, remove pot from heat and add spearmint leaves. Let steep for about 5 minutes.
  • After 5 minutes, remove spearmint leaves then add in matcha. Using a matcha whisk (or just a regular whisk), stir for about a minute, until matcha is fully integrated.
  • Then, stir in almond milk and honey (or maple syrup).
  • Serve hot with a sprig of fresh mint. Enjoy!

    I am such a fan of matcha tea so the sound of combining matcha wiht mint sounds really lovely – will really need to try this out!

    This looks amaaaaazing! Do you think ordinary mint would work though? I have absolutely no idea where to get spearmint.

      Any type of mint would work – peppermint, spearmint, etc. :D

    Much of my weekend was definitely spent on reflection. So sad that so many lives were taken this weekend- not just in Paris, but also in Beirut, Japan, Baghdad, and Mexico… it really makes me think about how blessed I am to live in a peaceful place and wake up each morning knowing that I have a roof over my head and food on my plate each night. xo

    Just looking at all of this green is making me want to turn on my kettle. On a serious note, your words ring so true in this time of recent destruction. I called my mom and sister and hugged my friends and boyfriend a little tighter. You never know what could possibly be taken away from you, all at once.
