Today I’ve got an amazing recipe – raw chocolate fudge brownie bars. I’ll be honest, these little bars are straight up insanely good. They’ve been a clear favorite (out of all the recipes I’ve ever made) with everyone who’s tried them – my friends and my parents (none of whom are vegan). My mom’s already begged me to make them for her again. Basically, they’re little chocolatey squares of decadent heaven. This is a recipe you can’t miss, people!!

Raw Chocolate Fudge Brownie Bars

You won't believe these chocolate fudge brownie bars are raw and vegan - they're sumptuously chocolatey and decadent!

Ingredients
  

Crust

  • 1 Cup Raw Buckwheat Groats
  • 1/2 Cup Walnuts
  • 1/4 Cup Raw Cacao Powder
  • 1/4 Cup Raw Agave
  • 2 Dates

Chocolate Ganache

  • 1/2 Cup Raw Coconut Butter melted
  • 1/4 Cup Raw Agave
  • 1/4 Cup Raw Cacao Powder

Chocolate Topping

  • 1/3 Cup Raw Coconut Oil melted
  • 1/4 Cup Raw Cacao Powder
  • 1/4 Cup Raw Agave

Instructions
 

Crust

  • In a food processor, add buckwheat and walnuts and process until a semi-fine meal is formed. It's okay if some of the buckwheat groats are still whole.
  • Then, add in cacao, agave, and dates and process until a sticky dough is formed.
  • In a small pan lined with parchment paper (I used a bread loaf pan), press crust down evenly.

Chocolate Ganache

  • In a bowl, combine melted coconut butter, agave, and cacao powder and mix until evenly combed. Pour over crust layer into the pan. Set into freezer while you make the chocolate topping.

Chocolate Topping

  • In a bowl, combine melted coconut oil, cacao powder, and agave and mix until evenly combined. Pour over chocolate ganache layer and set in the freezer to harden.

Putting It All Together

  • Let brownie bars set in the freezer for an hour. When finished setting, cut into slices and serve.
  • Brownie bars will keep in the refrigerator for up to a week.

    I totally get it, Sarah. Sharing life with someone who loves you for who you are and is with you 100% is such an incredible gift. No doubt being apart makes one appreciate all the little things. Rob and I did that for 20 years while he was in the Navy for 6 months at a time. It was so hard being apart.. we are grateful that part of our lives is behind us. What a sweet treat for Ryan upon returning home. I love these bars. I have a similar recipe, but use maple syrup and for the fudge layer, coconut cream. I can’t seem to get enough buckwheat! I’m using it in everything from porridge, to granola and breakfast cookies! I love it’s crunch and nutty notes. This is such a fabulous recipe and beautifully photographed.       I can’t imagine how hard it must have been when your husband was in the Navy! I missed Ryan like crazy, and he was only gone for a week! But props to you for making it through such a difficult journey, it really gives me hope for love in the world :)

So happy he’s back home and can test all the recipes you’ve got cooking up in your kitchen. THESE brownie bars?!!! I’m amazed.     These r lovely. Thanks for the recipe! Always excited to get a healthy nutrient rich dessert. I like soaking the buckwheat first…sometimes even use sprouted if i had on hand…it helps the crust stick..
