It may be May 1st, but here in Connecticut it’s a chilly 45 degrees and cloudy and gloomy outside. So what better day than to post my Pineapple Sunshine Smoothie? Granted, yesterday was supposed to be Smoothie Saturday, but I decided to take advantage of the gorgeous weather yesterday and save this post for today.
In other news, I finally have my little garden all planted! We have two tomato plants, two strawberry plants, parsley, basil, red leaf lettuce, and mint. They seem to have taken root well, and I’m hoping they’ll thrive even though it’s been pretty chilly lately! But if any of you have any good gardening tips, I’m all ears!
So here’s what caught my eye on the webs this week:

5 // For someone with Italian heritage, pesto is pretty much its own food group. Right now I’m drooling over this Tuscan kale and pumpkin seed pesto!
6 // So Whole Foods is starting a new line of grocery stores called 365 by Whole Foods Market, geared towards more budget-conscious shoppers. I’m really excited about this new business model, in hopes that it will make healthy food more accessible to more people!
7 // On why winter shouldn’t have a monopoly on comfort food + a comforting spring salad. All the yums.

Pineapple Sunshine Smoothie
Ingredients
- 1 Cup Frozen Mango
- 2 Cups Fresh Pineapple
- 1/2 Cup Fresh Squeeze Grapefruit Juice
- Water as needed
- Orange Slices to serve
Instructions
- Combine all ingredients into the blender and blend until smooth and creamy.
- Serve with fresh orange slices.
- Enjoy!

Congrats on getting your garden going, I have planted a few things but I would love to get some strawberries! Those are SO incredibly delicious freshly picked mmm! I’m terrible at gardening, so no tips here. I pretty much just go on luck :D
