If you follow me on Instagram, you’ll see that a couple of times a week I post my vegan dinner bowls. Usually it’s a salad made with kale or mixed greens, pasta, roasted chickpeas (I like to use this recipe), nuts and seeds, and vegetables. For my dressing I almost always make this vegan sriracha ranch recipe, or sometimes a black pepper or chipotle variation. I don’t know where I got the idea to use hemp seeds as a base, but it’s an absolutely delicious way to make a creamy, dairy-free dressing. The key is blending it for a long enough time where it becomes totally smooth and creamy. Even though I have a high-speed Vitamix blender (Amazon affiliate link to the one I have, very affordable), I still blend the dressing for at least a minute to get the best possible result.
It’s been really nice sharing my dinners and everyday meals on Instagram and getting positive feedback. A bunch of people have messaged me saying that seeing what I eat and how I prepare it (via Instagram stories) helps them meal prep for themselves and their families. That is EXACTLY what I have hoped to accomplish by sharing my cooking tips!! I remember when I first went plant-based, I had no idea what to make. Everybody I knew was giving me these dire warnings about how I wouldn’t be getting enough protein (cue eye roll). But little did they know that my usual dinner with whole wheat pasta, beans, 1/2 an avocado, and pumpkin seeds is about 25 g of protein. That’s a lot!!
The entire goal of my blog is to show that plant-based eating is fun, accessible, and above all – super delicious. If any of my recipes have inspired you to eat less meat, or put more vegetables on your plate, then I’ll have considered myself a success :)
Vegan Sriracha Ranch Dressing
Ingredients
- 1/2 Cup Hemp Seeds
- 1/2 Cup Water
- 2 Tbs Olive Oil
- 1 1/2 Tbs Sriracha
- 2 Tbs Chopped Red Onion
- 1/2 Tsp Dried Parsley
- 1/4 Tsp Black Pepper
- 1/2 Tsp Salt or more to taste
- 1/4 Tsp Dried Dill
Instructions
- Combine all ingredients into a blender, and blend on high until smooth and creamy. Taste, and adjust seasonings to your preference.
- Enjoy on salads, as a dip for vegetables, or spread on sandwiches!
