These Vegan Chocolate Chip Cookies are the perfect sweet treat, made with healthy, wholesome ingredients!
Hello folks! I’m really excited to be posting today because I have a lot to cover with you. The first thing I have to talk about is these magical vegan chocolate chip cookies. I am a horrible, awful baker, but I worked SO hard to make these cookies perfect for you. I tested them 5 or 6 times to make sure they would be perfect. That being said, I’m nervous to post this because I know everybody’s oven is different. So please feel free to email me any feedback, or leave a comment on this post letting me know how these go for you. In any case, it’s a vegan recipe, so if all else fails you can just eat the dough ;)
The second thing I want to talk to you about is a new direction for what I post here at Well and Full. There have been two things that have made me have some serious reflections on the concept of home, and what that means to me. The first reason I’ve been thinking about home is because I just moved to a new house with my fiancé. Prior to this we were living in an apartment where I felt uncomfortable, unsafe, and anxious. The way I am phrasing this is the understatement of the century – things were REALLY bad there. I also had some traumatic events happen to me, involving health issues and an accident where my dog was hurt, among other things. Suffice to say, our old apartment didn’t feel like home. It was a bad place for us, and Jon and I knew that we wouldn’t be able to have a happy, healthy relationship if we stayed there. So we moved!
It’s been about two weeks in our new house and I already feel like a different person. I feel safe here. We have privacy. It’s a nice, quiet neighborhood. It’s not a big house, and it’s not fancy or expensive, but it’s beautiful because it’s OURS.
The second reason I’ve been thinking about home is because I’ve been watching a lot of Fixer Upper, which is one of my favorite shows. If you’re not familiar with it, it’s about a husband and wife team (Chip and Joanna Gaines) in Waco, Texas, who renovate “fixer upper” houses and create a beautiful home for their clients. The show is perfect to me – it’s about design, home, and family. Interspersed throughout the stories of how the houses are being renovated, the show gives a little insight into Chip and Jo’s home life at their farm with their four kids.
While I love home decorating and design, the best things to me about the show are Chip and Jo themselves. I respect Joanna Gaines so much, and look up to her as a role model. Even though she’s a mom of four, she’s still a creative business owner and has worked really hard to create a brand. But you can really tell that the most important things to her are family and home. And when I watch her on the show, I see myself too – a creative business owner who loves her family more than anything, and works hard to have a loving home life.
Now that my fiancé and I are living in our new house, I feel more motivated than ever to create a beautiful home where we can grow, love each other, and enjoy our time together. I want to create the home that I’ve always dreamed about. And I feel like it’s finally my time.
Expanding on this theme, I was thinking about how I can make the content here on Well and Full reflect my love of home and family. Don’t worry, there aren’t going to be any huge shifts in the recipes here. But I am going to include more homestyle, family-friendly recipes that maybe aren’t as nutritionally meritorious as the recipes I’ve posted previously ;) These vegan chocolate chip cookies are a great example – they’re definitely a treat, but they’re still made in the Well and Full signature style with the wholesome ingredients.
The recipes I want to start posting are going to be comforting, nourishing for the body AND soul, and made with the idea of cooking for loved ones. Some ideas I had include homestyle biscuits, vegan mac and cheese, chocolate chip banana muffins, vegan buttermilk pancakes, and sweet strawberry jam. Vegan Chocolate Chip Cookies
These vegan chocolate chip cookies are the perfect sweet treat, made with healthy, wholesome ingredients. The recipe makes about 16 cookies.
- 2 Cups Whole Wheat Flour
- 1/4 Tsp Baking Powder
- 1/4 Tsp Baking Soda
- Pinch of Sea Salt
- 3/4 Cup Dark Chocolate Chips
- 1/3 Cup Maple Syrup
- 1/3 Cup Coconut Sugar
- 1/3 Cup Melted Coconut Oil
- 1/2 Tsp Vanilla Extract
- 4-6 Tbs Almond Milk
Preheat your oven to 350 degrees F.
In a bowl, mix all dry ingredients.
In a smaller bowl, mix all wet ingredients and stir until they're evenly combined. Do NOT add in the almond milk yet.
Pour the wet ingredients into the dry ingredients, mixing well until a crumbly dough is formed.
Start by adding in 4 tbs of almond milk. Stir until it's fully incorporated into the dough. If dough is still too crumbly, add the additional 1-2 tbs almond milk until the dough sticks together and holds its shape.
Using a cookie or ice cream scoop, portion out your cookies onto a baking sheet lined with parchment paper, leaving about 2 inches in between cookies. You should have about 16 cookies. Please note that you may need to use more than one baking sheet.
Flatten the cookie dough into 1/2-3/4 inch disks, and even out the edges with your hands. Cookies will NOT flatten when cooked, so make the edges as neat as you'd like!
Bake ONE baking sheet of cookies at a time in the oven for 10 minutes. When done, let cool. Repeat until you have baked all the cookies.
Serve warm with a glass of cold vanilla almond milk.
- For this recipe you can either use 3/4 cup chocolate (I prefer dark, but you can use any chips you like), or an approximately 3 ounce chocolate bar, cut up finely.
- I have not made these cookies on a baking sheet without parchment paper, so I would not recommend you baking them without the parchment paper.
