Popping in with a quick, delicious recipe today! Lately I’ve been on a major grapefruit kick. I absolutely love citrus in all forms, but I’ve always been one of those people who loves grapefruit and eats them raw. This Grapefruit Mint Lemonade is SO easy and refreshing, it’s the perfect drink for my grapefruit cravings!

If you’ve never made a recipe with spearmint before, fear not. It won’t taste like toothpaste ;) Culinary spearmint actually has a very earthy, herbal flavor, that works great with citrus fruits. It can also be used deliciously in savory contexts (check out my mint pesto!), which came as a huge shock to me when I first tried it!

Making this lemonade with mint makes me seriously wish it was gardening season. I hate this period of winter, after Christmas, where it feels like the cold weather stretches on forever. I long for warmer temps, gardening, yardwork, flowers, and everything that comes in Spring. My fiancé and I had our first year of gardening last year, and it was a huge learning curve for us. For example, we learned that peppers (including chili and bell) are fierce growers – we ended up with over 50 hot peppers in four plants! We also had a bit of a trial-and-error keeping the forest critters away from our strawberry plants. We’ve stocked up on netting so that won’t happen again this year!

I seriously wish it was Spring, but until then, this earthy and refreshing Grapefruit Mint Lemonade should hold me over. I hope you enjoy the recipe!

Grapefruit Mint Lemonade

This Grapefruit Mint Lemonade is the perfect refreshing drink, and comes together in minutes! Made with simple, whole food ingredients. Please note that this is a little on the tart side, so feel free to add more sugar as needed.

Ingredients
  

  • 6 Cups Water
  • 2 Lemons
  • 3 Ruby Red Grapefruits
  • 1/8 - 1/4 Cup Cane Sugar
  • 1-2 Sprigs Spearmint Leaves

Instructions
 

  • In a blender, combine all ingredients. Start with 1/8 cup sugar (you can always add more later). Be sure to squeeze out as much juice from the lemons and grapefruits as possible.
  • Blend the lemonade on high for about 1 minute. When done, let the lemonade "rest" for about 10 minutes, so the sugar can fully dissolve.
  • Then, blend the lemonade one more time, for about 30 seconds. If you feel the lemonade is too tart, add more sugar.
  • Serve in glasses with grapefruit slices and mint leaves, if you'd like.
  • Enjoy!

Notes

For a unique flavor, try adding in a dash of maple syrup or honey, if you'd like.

    I can’t wait to make this; could I substitute the cane sugar completely with agave or honey instead ?

      Hi Seleña, I would try making this recipe with 2-3 tbs agave or honey first, then testing to see how you like that level of sweetness. Then add more sweetener as needed :)

    Delicious. I made it today for Easter. My only warning is check the size of your blender—you may need to divide it into two batches.
