Lucky Lime Oat Truffles

These lucky lime oat truffles are perfect for St. Patrick's Day - they're quick to make, delicious, and full of lucky lime flavor! Like key lime pie, but in truffle form.

Ingredients
  

  • 1 1/2 Cups Rolled Oats
  • 1 Cup Pitted Dates
  • 1 Tsp Lime Zest
  • 2 Tbs Maple Syrup
  • 1-2 Tbs Water

Instructions
 

  • In a food processor, combine all ingredients and process until a sticky dough is formed. Add in 1 tbs of water first. If the dough still isn't sticking together, add the 2nd tbs of water.
  • Remove dough from processor and shape into 1 - 1 1/2 inch sized truffles. You'll end up with 7-8 truffles.
  • Enjoy!

Notes

These truffles will keep in the fridge for about 3-4 days.
