Vegan Sunshine Popsicles

These vegan sunshine popsicles and bright, tangy, and perfect for summer! Like a frozen slice of sunshine!

Ingredients
  

  • 2 1/2 Cups Frozen Pineapple
  • 2 1/2 Cups Frozen Peaches
  • Juice from 1/4 - 1/2 Lemon to taste
  • 2 Tbs Maple Syrup
  • 1/4 Tsp Turmeric optional
  • 1 - 1 1/2 Cups of Water

Instructions
 

  • In a high-speed blender, add in all ingredients except the water.
  • Try starting out with the juice from 1/4 of a lemon. If desired, add more. (I did, because I love tangy flavors!)
  • Start by blending the mixture with about 1 cup of water. The mixture will be VERY thick, and you will need to use your blender stirrer attachment to mix it up.
  • If needed, add in the extra 1/2 cup of water. However, try not to use more than that or the frozen mixture may separate in the popsicle molds. It'll still taste great though :)
  • Spoon the frozen mixture into popsicle molds (it will be too thick to pour). You should have just enough for a standard 10-popsicle mold. Gently bang the mold down on the counter to make sure the mixture "settles" into the molds.
  • Freeze popsicles overnight.
  • Enjoy!!

Notes

I made these popsicles with this mold (affiliate link) and the recipe just makes enough for 10 popsicles. However, you can use whatever popsicle molds you have on hand, just note that the mixture may be too little / too much. If you don't have popsicle molds at all, this recipe is killer as a smoothie :)
