Vegan Bagel Sandwich w/ Jalapeño Hummus

This vegan bagel sandwich is packed with flavor in every layer - with everything bagels, jalapeño hummus, and tomato cayenne vegan cheese!

Ingredients
  

Jalapeño Hummus

  • 1 15 oz Can Chickpeas rinsed and drained
  • 1 Jalapeño ribs and seeds removed
  • 2 Cloves Garlic
  • 1/3 Cup Cilantro
  • Juice from 1/2 a Lemon
  • 1/2 Tsp Salt or more to taste
  • Black Pepper to taste
  • 2 Tbs Extra Virgin Olive Oil

The Rest of the Sandwich

  • Everything Bagels
  • Field Roast Tomato Cayenne Chao Slices
  • Spinach
  • Tomato sliced
  • Red Onion sliced

Instructions
 

  • Start by making the hummus. Prep your jalapeño by removing the ribs and seeds. Add all ingredients into a food processor, and process on high until hummus reaches desired consistency.
  • Then, toast your bagels either in a toaster or by broiling them in the oven for a few minutes.
  • Assemble your bagels - add on a layer of jalapeño hummus, then the Field Roast Tomato Cayenne slices, then spinach, red onion, and tomato. 
  • If bringing to a tailgate, be sure to wrap the sandwiches in aluminum foil.
