Vegan Roasted Green Beans

These vegan roasted green beans are the perfect Thanksgiving or holiday side dish! Made with garlic and lemon, these green beans are full of flavor!

  • 1 Lb Green Beans washed and trimmed
  • 2-3 Cloves Garlic minced
  • 2-3 Tbs Extra Virgin Olive Oil
  • Juice from 1/4 a Lemon
  • 1/4 Tsp Salt or more to taste
  • Black Pepper to taste
  • Chopped Parsley for serving


  1. Preheat your oven to 425 degrees F.

  2. Toss your washed, trimmed, and dried green beans with the minced garlic, olive oil, lemon juice, salt, and pepper. Toss until evenly coated.

  3. On a baking sheet lined with parchment paper, bake green beans in the oven for 20-25 minutes, or until browned and slightly crispy on the edges.

  4. Serve with chopped parsley, if desired.
