Cook Time 30 minutes
Total Time 45 minutes

  • 1/2 White Onion chopped
  • 1 Cup Chopped Carrots
  • 1 Cup Chopped Celery
  • Neutral Vegetable Oil for sauté
  • 1/2 Tsp Ground Turmeric
  • 2 Tsp Fresh Grated Ginger
  • 2 Cloves Garlic
  • 1 Cup Chopped Green Beans
  • 1 Cup Chopped Kale
  • 4 Cups Vegetable Broth
  • Juice from 1/2 Lemon
  • 1/2 Tsp Paprika
  • Pinch of Red Pepper Flakes optional
  • Salt to taste
  • Black Pepper to taste
  • 1 - 1 1/2 Cups Pasta of your choice
  • Sprouts for serving

  1. Bring a drizzle of a neutral vegetable oil to medium heat in a large pot. Add in the carrots, celery, and onion, and sauté for about 5 minutes, or until softened.

  2. Then, add in the ground turmeric, fresh grated ginger, and garlic, and sauté for about 30 seconds, until fragrant.

  3. Then, add in the green beans and kale and sauté for another minute, until the kale is wilted.

  4. Add in the vegetable broth, lemon juice, paprika, red pepper flakes, black pepper, and salt, and stir well. Simmer for about 20-25 minutes.

  5. Then, add in 1 - 1 1/2 cups of your favorite pasta. I used chickpea cavatappi. Simmer the pasta until al dente, about 9-10 minutes.

  6. Serve soup with sprouts, if desired.

  7. Enjoy!

Recipe Notes

This is the pasta I used for the soup (affiliate link). You can use between 1 and 1 1/2 cups of pasta for this recipe, depending on your preference of broth/noodles ratio.
