Spicy Veggie Stir-Fry

This spicy veggie stir-fry takes under a half hour to make, but is full of healthy vegetables and plant-based nutrients!

  • 4 oz Pasta I used chickpea pasta
  • 1 1/2 Cups Carrots sliced
  • 2 Cups Broccoli cut into florets
  • Avocado Oil for sauté
  • 2 Tbs Soy Sauce
  • Juice from 1/2 a Lemon
  • Black Pepper to taste
  • Cayenne to taste
  • Sprouts for serving
  • Sesame Seeds for serving


  1. Begin by cooking your pasta until al dente. When done, drain and set aside.

  2. Bring a drizzle of avocado oil (or other neutral vegetable oil) to medium heat in a skillet. Add in the sliced carrots and broccoli florets, and sauté for 5-10 minutes, or until browned and softened.

  3. While the veggies are sautéing, mix the soy sauce, lemon juice, black pepper, and cayenne together in a separate bowl. Whisk together with a fork until well blended.

  4. Then, add in the cooked pasta to the pan with the veggies. Add in the sauce and stir-fry for an additional 1-2 minutes.

  5. When done, serve with sprouts and sesame seeds (if you'd like).

  6. Enjoy!
