Servings 4 as a side

Ingredients

  • 2 Cups Chopped Strawberries
  • 1/2 Jalapeño diced
  • 1/4 Red Onion diced
  • 1/4 Cup Cilantro chopped
  • 1 Tsp Honey
  • Juice from 1 Lime
  • 1/4-1/2 Tsp Salt to taste

Instructions

  • To begin, prep all your ingredients. For a spicy salsa, dice the jalapeño and use a little bit of the inner ribs and seeds. For a milder salsa, remove the ribs and seeds.
  • Once your strawberries, jalapeño, red onion, and cilantro are finely chopped, mix them all together in a bowl with the honey and lime juice.
  • Let the salsa rest in the fridge for 15-30 minutes, to allow the flavors to develop. (You can definitely eat it immediately, but it won't taste as good!!)
  • Serve the salsa with your fave tortilla chips, on top of tacos, or on your favorite veggie burger.
  • Enjoy!

Notes

For a salsa that's not spicy at all but still flavorful and fresh, try subbing out the jalapeño with about 1/4 chopped green bell pepper.
