To begin, prep all your ingredients. For a spicy salsa, dice the jalapeño and use a little bit of the inner ribs and seeds. For a milder salsa, remove the ribs and seeds.
Once your strawberries, jalapeño, red onion, and cilantro are finely chopped, mix them all together in a bowl with the honey and lime juice.
Let the salsa rest in the fridge for 15-30 minutes, to allow the flavors to develop. (You can definitely eat it immediately, but it won't taste as good!!)
Serve the salsa with your fave tortilla chips, on top of tacos, or on your favorite veggie burger.
Enjoy!
Notes
For a salsa that's not spicy at all but still flavorful and fresh, try subbing out the jalapeño with about 1/4 chopped green bell pepper.
