To start, wash and dry your russet potatoes. Leaving the skin on, chop them into 1-2 inch chunks.
Bring a large pot of water to boil. Boil the potatoes for about 15-17 minutes, or until tender when pierced with a fork (but not totally mushy). When done, drain the water then add the potatoes to a large bowl.
While the potatoes are boiling, mix the flavorings together. Melt the butter or vegan butter, then add in all other seasoning ingredients. Whisk until everything is evenly mixed.
When potatoes are drained and in the bowl, use a hand-masher to mash the potatoes. You can mash them as little or as much as you like, but I like leaving chunks to keep the rustic texture.
Then, stir in the seasoning mix plus the milk or almond milk. Stir until everything is evenly mixed.
Taste, and adjust seasonings to your preference. If the flavors feel a little flat, add in a pinch of salt or two.
Serve mashed potatoes warm.
