Bring a soup pot to medium heat with a glug of olive oil.
Add in diced onion and celery, and sauté until onions are soft, about 5-10 minutes.
Then, add in minced garlic and fresh thyme leaves and sauté for another 1-2 minutes, until garlic is fragrant. Be careful not to let the garlic brown!
Then, add in lemon juice, vegetable stock, water, and spices. Add salt to taste - this is very important!
Once everything is added in the pot, let simmer for about 15 minutes, so the flavors can really meld.
When done, serve soup over cooked pasta. I used heart-shaped noodles, but you can use any type you like! I wrote 2-3 cups in the recipe, but you can really use as much or as little pasta as you like. Cooked rice or grains (like wheatberries or spelt) would be great too!
Serve with fresh herbs if you like - I used a little parsley and some sprouts.
