Green Tea Ramen

This green tea ramen is a celebration of chewy ramen noodles in a beautifully fragrant vegetable and green tea broth. This is not your average ramen!

Ingredients
  

  • 4 Cloves Garlic minced
  • Neutral Oil for Sauté
  • 4 Cups Vegetable Stock
  • 2 Green Tea Sachets
  • 6 Scallions chopped
  • 2 Tbs Soy Sauce
  • 1 Tsp Sesame Oil
  • 2 Ramen Blocks I used spinach ramen

Instructions
 

  • Bring a large pot to medium-low heat.
  • Once pot is hot, add in minced garlic and sauté for a few minutes, or until garlic is fragrant. Be careful not to let garlic brown - it completely changes the flavor of the soup.
  • Once garlic is done sautéing, add in four cups vegetable stock with the 2 green tea sachets. Let the stock simmer with the green tea for about 5 minutes (you can always simmer for longer for a stronger green tea flavor). Once done, use tongs to remove green tea sachets.
  • Then, add in chopped scallions, soy sauce, and sesame oil. Simmer for about 2-3 minutes, or until scallions are softened.
  • Place the ramen noodle blocks in two bowls. You can use any type of ramen you like - even this classic brand. Just leave out the flavor packets. I got my spinach ramen at my local Asian grocery store.
  • Ladle the broth over the ramen evenly, and let sit for a few minutes, until ramen is softened (about 5-10 minutes).
  • Serve and enjoy!
