Almost Raw Vegan Tacos

These almost raw vegan tacos are the perfect meal for late summer, and packed with plant-based protein from the walnuts and sunflower seeds!

Ingredients
  

Tacos

  • 1 Head Red or Green Lettuce
  • Handful Cherry Tomatoes chopped
  • 1/2 Red Onion chopped
  • 1 Mango peeled and chopped

Nut "Meat"

  • 2 Cups Walnuts
  • 1/2 Cup Sunflower Seeds
  • 1/4 Tsp Smoked Paprika
  • 1 Tsp Chili Powder
  • 1/4 Tsp Cumin
  • 1/4 Tsp Salt
  • Olive oil for sauté

Instructions
 

Nut "Meat"

  • To make the nut meat, combine all ingredients into the food processor and pulse a few times, until nuts are chopped. Don't overprocess - be sure to leave big-ish chunks of nuts.
  • Bring a sauté pan to medium heat. Add in a little extra virgin olive oil, and sauté nut meat for about 2-3 minutes, or until warm and fragrant.

Tacos

  • Prep the veggies and mango. Mix tomatoes, onion, and mango to make a pico de gallo.
  • To assemble tacos, stuff lettuce leaves with as much nut meat / pico as desired.
  • Serve and enjoy!

Notes

To make these tacos fully raw, just process the nut meat with the spices in the food processor and serve immediately, skipping the sauté step.
