Ingredients
Egg Mixture
4Eggs
1/4TspSalt
1/2TspChili Powder
1/4TspGarlic Powder
Fresh-Cracked Black Pepperto taste
Migas
1TbspNeutral Oillike avocado oil

1/4CupRed Onionchopped, diced
1/3CupGreen Peppersi.e. bell peppers or jalapeños, diced
1CupCorn Tortilla Chipsgently crushed

Instructions
In a small mixing bowl, combine the eggs, salt, and spices. Whisk together vigorously until very few streaks of egg whites remain.
Bring a sauté pan to medium-low heat. Once the pan is heated, add in the oil and butter. Once the butter is melted, add the diced onions and peppers and stir. Sauté for about 2-3 minutes, or until the onions and peppers are softened.
Then, add in the crushed tortilla chips and stir until mixed with the onions and peppers. Continue to sauté for another 1-2 minutes, or until tortilla chips start to brown in places.
Reduce the heat to the lowest possible setting. Pour the eggs over the tortilla chips, onions, and peppers in the pan, and gently stir to scramble the eggs into the mixture. Continue until eggs are JUST set, about 1-2 minutes. When done, remove from heat.
Top the migas with the toppings of your choice - I recommend cotija cheese, salsa, fresh oregano, and spicy peppers.
Serve hot and enjoy!
Notes
When crushing the tortilla chips, you want them to be in bite-sized pieces but not in small crumbs. Crush accordingly!
Cilantro goes so well with the flavors here, but if you don't like it, parsley is fine too.
