Ingredients
1Baguettesliced on the bias
1/4CupExtra Virgin Olive Oil
8ozGoat Cheesea large block or two smaller blocks
1CupCranberry Chia Jam
Fresh Thymefor garnish
Instructions
First, either make the cranberry chia jam or use a jam of your choosing!
To begin, preheat your oven to 400 degrees F.
Cut your baguette into about 20 slices, on the bias (diagonally). Each slice should be about 3/4" inch thick or so.
Using a pastry brush, brush the olive oil on each side of each baguette slice.
Place all of the olive oil-brushed sliced of the baguette on a baking tray lined with parchment paper.
Bake the slices in the oven for about 12-14 minutes, until golden (but not over-browned). Check often near the end of the cooking time to prevent burning.
Take the crostini slices out of the oven and let them cool on a baking tray.
Then, add about 1 tbsp of goat cheese to each crostini (it doesn't have to be exact). Spread on a scant tablespoon of cranberry chia jam on top of the goat cheese, then garnish with fresh thyme. None of these measurements need to be exact - measure with your heart!
Serve and enjoy!
Notes
For this recipe I recommend using my Cranberry Chia Jam recipe, but you can use any jam you like, such a strawberry or cherry!
If you don't like goat cheese, sub for plain cream cheese.
You can prep all of the ingredients beforehand, but wait to assemble the crostini until just before serving for maximum crispiness!
