Start by prepping your veggies - chop the onion, remove ribs and seeds from pepper and jalapeno and chop them up.
Bring a large pot to medium heat on the stove with a drizzle of extra virgin olive oil.
Once oil is hot, add onions and saute until semi-translucent.
Then, add in the chopped bell pepper and jalapeno, and stir for about 2-3 more minutes.
When veggies are soft, add in black beans and kidney beans and give them all a good stir.
Then, add in pumpkin puree, broth, IPA, cilantro, and spices, stirring until everything is evenly mixed.
Let stew simmer for about 10 minutes, so the flavors can all really meld. Taste, and adjust seasonings if necessary.
When done, remove stew from heat and serve in bowls or mugs.
Top with fresh cilantro, if desired.
