Vegan Vanilla Granola

This vegan vanilla granola is the perfect, crunchy way to start your morning - with rolled oats, coconut flakes, and walnuts.

Dry Ingredients

  • 2 Cups Rolled Oats
  • 1/3 Cup Coconut Flakes
  • 1/3 Cup Walnuts
  • 1/3 Cup Pecans

Wet Ingredients

  • 1/4 Cup Coconut Oil melted
  • 1/4 Cup Maple Syrup
  • 1/4 Tsp Cinnamon
  • 1 1/2 Tsp Vanilla Extract
  • Pinch of Sea Salt


  1. Preheat your oven to 325 degrees F.

  2. In a mixing bowl, add in all dry ingredients.

  3. In a smaller bowl, add in all the wet ingredients and mix well.

  4. Add in the wet ingredients to the bowl of dry ingredients, stirring well to make sure everything is coated.

  5. On a baking sheet lined with parchment paper (NOT foil), bake granola for 15-20 minutes, checking often at the end to prevent burning.

  6. Once the granola is done, let cool for 10-15 minutes. Do NOT skip this step! The granola hardens as it cools.

  7. Serve with vegan yogurt, fruit, and an extra topping of cinnamon. Enjoy!
