Vegan Vanilla Granola

This post was created in collaboration with One Degree Organics. This is a brand I’ve been working with for a long time, and I’m very passionate about the quality of their products. All opinions are my own, and I think One Degree Organics rocks!

As a blogger, from time to time I’ll work with brands whose products align with the aims of my blog. Everything I recommend here is something that I personally use and enjoy – I’ll never promote something that I don’t believe in. However, my relationship with One Degree Organics is really something special.

I first came to work with One Degree Organics back in early 2017, using their sprouted spelt flour in my banana bread recipe. What really amazed me with this product (and ALL of One Degree Organic’s products) is that you can track to see where it came from. Using a code on the bag, you can trace the journey of the flour from the actual plant to your kitchen. Having this kind of transparency is really something amazing… you know exactly what you’re getting, and exactly where it’s coming from.

But to be honest, as a cook, the most important thing to me is product quality. I can happily say that every single One Degree Organics product is of the highest quality. Even though I only work with the flour and oats as part of my blog work, I go out of my way to buy their cereals and granolas for my own kitchen. In fact, my boyfriend ate an entire box of their Cacao-O’s in two days. Yeah, it’s that good!

Today, I’m proud to bring you a recipe that uses a One Degree Organics product. This vegan vanilla granola is a breeze to make, and is the perfect way to start your day! Just a few notes about the recipe – be sure to bake your granola on parchment paper, NOT foil. This will ensure that the granola doesn’t stick. Also make sure you don’t touch the granola for 10-15 minutes after it’s done cooking (although this will be very hard) – the granola hardens as it cools.

I hope you love this recipe!!

Vegan Vanilla Granola

This vegan vanilla granola is the perfect, crunchy way to start your morning – with rolled oats, coconut flakes, and walnuts.
Prep Time 10 minutes
Cook Time 20 minutes
Total Time 30 minutes

Ingredients

Dry Ingredients

  • 2 Cups Rolled Oats
  • 1/3 Cup Coconut Flakes
  • 1/3 Cup Walnuts
  • 1/3 Cup Pecans

Wet Ingredients

  • 1/4 Cup Coconut Oil melted
  • 1/4 Cup Maple Syrup
  • 1/4 Tsp Cinnamon
  • 1 1/2 Tsp Vanilla Extract
  • Pinch of Sea Salt

Instructions

  • Preheat your oven to 325 degrees F.
  • In a mixing bowl, add in all dry ingredients.
  • In a smaller bowl, add in all the wet ingredients and mix well.
  • Add in the wet ingredients to the bowl of dry ingredients, stirring well to make sure everything is coated.
  • On a baking sheet lined with parchment paper (NOT foil), bake granola for 15-20 minutes, checking often at the end to prevent burning.
  • Once the granola is done, let cool for 10-15 minutes. Do NOT skip this step! The granola hardens as it cools.

Hey Jessica! My favorite is definitely Forager Cashewgurt. In my opinion, it tastes exactly like the real thing (if not better). I also like the Kite Hill line of yogurts too! :)
