This Summer Peach Salsa showcases the best of fresh summer produce! Made from seasonal vegetables, it's the perfect simple + delicious dip!

Ingredients
2Peachesabout 2 cups diced
1/2CupRed Oniondiced
1PintCherry Tomatoesdiced
1Jalapeñodiced
1/4CupCilantrofinely minced
1/4CupParsleyfinely minced
Zest from 1 Lime
Juice from 1 Lime
1/2TspSea Saltor more, to taste
Black Pepperto taste
Instructions
Start by prepping all of your ingredients - dice the peaches, red onion, and cherry tomatoes, and jalapeño, and mince the herbs.
Add peaches, vegetables, and herbs to a bowl. Over the bowl, zest 1 washed and dried lime. Then, juice that same lime into the bowl.
Add in the salt and black pepper, and stir well.
Let salsa sit for 10 minutes for the flavor to develop. After 10 minutes, check the flavor and add more salt or lime if desired.

Notes
For a spicier salsa, keep the "ribs" and seeds of the jalapeño. To make the salsa less spicy, remove the ribs and seeds.
For this recipe I used heirloom cherry tomatoes, but you can use any small tomato you like.
Optionally, feel free to add the salsa to a food processor and process until a smooth consistency is formed. I do recommend keeping the texture fairly chunky though! Also please note that the color when it's blended will not be a vibrant orange.
Don't skip the resting time - the salt and lime need time to macerate and infuse the salsa. Adding more salt too soon could result in a salsa that's too salty.
