Ingredients

  • 1/2 Cup Mayonnaise
  • Juice from 1 Lemon about 3-4 tbsp
  • 1/4 Cup Sun-Dried Tomatoes in Oil
  • 1/4 Cup Oil from the Sun-Dried Tomato Jar
  • 1 Clove Fresh Garlic
  • 1/4 Tsp Salt or more to taste
  • 1 Tsp Thyme
  • 1/2 Tsp Garlic Powder
  • 1/2 Tsp Paprika for color, optional
  • 1/4 Cup Freshly-Grated Parmesan optional

Instructions

  • Add all dressing ingredients to a blender. Blend on high until the dressing is completely smooth.
  • Taste, and adjust seasoning if necessary.
  • Enjoy!

Notes

For the serving size, I estimated about 6 servings for personal sized salads, allowing for 3-4 tablespoons of the dressing per serving. Of course, this will completely depend on your preference! In total, the recipe makes about 1 - 1.5 cups of dressing (depending on if you do any changes or substitutions).
