Marry Me Chicken is a recipe that was posted by Lindsay Funston on Delish several years ago, that blew up on TikTok and social media. The dish involves cooking chicken in a creamy sauce flavored with sun-dried tomatoes, garlic, thyme, and parmesan. When I saw that recipe, I thought, “These flavors would be delicious in a salad dressing!” And so this Marry Me Sun-Dried Tomato Salad Dressing was born.
While Marry Me Chicken refers to a specific dish, this flavor profile can be applied to many culinary creations. (In fact, the recipe on Delish was first titled “Skillet Sicilian Chicken”, in honor of the Italian flavors used.) My Sun-Dried Tomato Salad Dressing is an extension of this Mediterranean flavor profile. The combination of creamy mayonnaise, herby thyme, savory garlic, and flavorful sun-dried tomatoes creates a dressing that is so delicious, it’s almost like a ~*marriage*~ of tastes. (Sorry but I had to!!)
Not only can you use this dressing in my Marry Me Chickpea Salad, but also try it in my signature Well and Full Bowl (a filling salad bowl with pasta and chickpeas), or mixed into my Dense Bean Salad recipe!

Marry Me Chicken was a recipe first posted by Lindsay Funston on Delish. Since then, the recipe has been recreated all over social media and other food publications. But the original credit goes to Lindsay!
Why do they call it “marry me chicken”?
In her original post on Delish, Lindsay wrote, “After we spooned the sauce over the chicken for the last shot, our videographer Chelsea grabbed a fork to try the final result. Once she took a bite, she blurted out, “I’d marry you for that chicken!” and the now-famous name was born.”
What kind of sun-dried tomatoes should I use for this recipe?
Definitely use jarred sun-dried tomatoes in oil – you’ll use the oil from the jar to amplify the tomato flower in the salad dressing!
What are the Marry Me Chickpea Salad ingredients?
In the counterpart post to this recipe, my Marry Me Chickpea Salad contains three types of lettuce – radicchio, kale, and arugula. Of course, if you don’t like bitter greens, you can sub out spinach or romaine for the radicchio. In addition, I added in garlic-thyme roasted chickpeas and freshly-grated parmesan to pay homage to the original Marry Me Chicken recipe.
Marry Me Sun-Dried Tomato Salad Dressing
Ingredients
- 1/2 Cup Mayonnaise
- Juice from 1 Lemon about 3-4 tbsp
- 1/4 Cup Sun-Dried Tomatoes in Oil
- 1/4 Cup Oil from the Sun-Dried Tomato Jar
- 1 Clove Fresh Garlic
- 1/4 Tsp Salt or more to taste
- 1 Tsp Thyme
- 1/2 Tsp Garlic Powder
- 1/2 Tsp Paprika for color, optional
- 1/4 Cup Freshly-Grated Parmesan optional
Instructions
- Add all dressing ingredients to a blender. Blend on high until the dressing is completely smooth.
- Taste, and adjust seasoning if necessary.
- Enjoy!
