Vegan Pumpkin Curry

This easy, healthy vegan pumpkin curry is perfect for fall! With only a handful of ingredients, you'll have a delicious meal on the table in no time!

  • 1 Medium White Onion diced
  • Neutral Vegetable Oil for sauté
  • 2-3 Cloves Garlic minced
  • 1 15 oz Can Chickpeas rinsed and drained
  • 1 15 oz Can Pumpkin Purée
  • 2 Cups Vegetable Broth
  • 2 Tsp Curry Powder
  • 1 Tsp Turmeric
  • 1/2 Tsp Salt
  • 1/2 Tsp Black Pepper
  • 1/4 Tsp Cayenne
  • Juice from 1/2 a Lemon
  • Parsley for serving
  • Brown Rice for serving


  1. Bring a drizzle of neutral vegetable oil to medium heat in a large pot. Add in the diced onion, and sauté for about 5-10 minutes.

  2. Then, add in the minced garlic and sauté until fragrant, about one minute.

  3. Then, add in all the other ingredients and stir or whisk until evenly combined. Simmer for about 20-25 minutes, partially covered, or until chickpeas are soft and curry has thickened.

  4. When done, serve with brown rice and parsley.

  5. Enjoy!
