This spicy veggie stir-fry takes under a half hour to make, but is full of healthy vegetables and plant-based nutrients!

4ozPastaI used chickpea pasta
1 1/2CupsCarrotssliced
2CupsBroccolicut into florets
Avocado Oil for sauté
2TbsSoy Sauce
Juice from 1/2 a Lemon
Black Pepperto taste
Cayenneto taste

Instructions
Begin by cooking your pasta until al dente. When done, drain and set aside.
Bring a drizzle of avocado oil (or other neutral vegetable oil) to medium heat in a skillet. Add in the sliced carrots and broccoli florets, and sauté for 5-10 minutes, or until browned and softened.
While the veggies are sautéing, mix the soy sauce, lemon juice, black pepper, and cayenne together in a separate bowl. Whisk together with a fork until well blended.
Then, add in the cooked pasta to the pan with the veggies. Add in the sauce and stir-fry for an additional 1-2 minutes.
When done, serve with sprouts and sesame seeds (if you'd like).
