This spicy veggie stir-fry takes under a half hour to make, but is full of healthy vegetables and plant-based nutrients!
If you’ve been following me on Instagram, you’ll have already heard my big announcement, but I haven’t said anything on my blog yet. And the announcement is…. I’M ENGAGED!!!!!
I am so so thrilled to be taking this next step in my relationship with Jon. He and I met in college and were best friends for years before we started dating. And when we finally got together, everything clicked. I’ve never been so sure about anything in my life. He and I are so perfect for each other – our personalities are alike in many ways, and complementary in others. We bring out the best in each other.
A lot of people asked me if I was surprised or knew he was going to propose. And we had talked about it before – we both knew we were ready to take the leap. But I had gotten it into my head that he was going to propose Christmas morning. For some reason I thought he was going to hide my ring in a large box and propose to me then. So when he proposed on Christmas Eve day, I was completely taken by surprise!
I usually take Ivy to the park by myself, but when Jon’s home on weekends and holidays we go to the park together. We were walking back to the car when Jon told me to wait, because he wanted to give something to Ivy. Unbeknownst to him, I had just gotten a hangnail and was desperate to get my nail scissors in the car – I was convinced he was going to propose Christmas morning and needed to have perfect nails for all the photos I was going to take of my ring!! So at first I kept saying to him, “No, let’s go!!” But he was persistent, and I waited by the field for him to get his surprise in his car.
He walked back to me and Ivy with a lovely bouquet of flowers in his hand. And no, at this point, I still had no idea what was happening. I was still thinking he would propose Christmas Day. And then, he pulled a beautiful card out of his pocket. Despite the card having a total engagement theme, I STILL didn’t realize what was going on. I thought he was just building up a romantic gesture to set me up for the next day! But that’s when he got down on one knee and proposed.
At first I started laughing – I was so surprised and I couldn’t believe what was happening! But then I realized what it all meant, and I tearfully and joyously said yes. It was the perfect proposal!! And the fact that he proposed at the park so Ivy could be part of our big moment meant EVERYTHING to me. Ivy is so important to me, and she completes our little family.
So that’s my big announcement! I’m so happy to be engaged and we’ll actually have another announcement hopefully coming up soon (and no, it’s not going to be the Well and Full baby… yet!)!! ;)
This spicy veggie stir-fry is a new favorite in my kitchen. I have this same dressing recipe for my vegan breakfast salad, but wanted to try it out in a new context. It’s amazing how flavorful lemon juice and tamari can be!! Also, feel free to sub in or out any veggies that you like in this recipe. Bell peppers or bean sprouts would also be delicious!

Spicy Veggie Stir-Fry
Ingredients
- 4 oz Pasta I used chickpea pasta
- 1 1/2 Cups Carrots sliced
- 2 Cups Broccoli cut into florets
- Avocado Oil for sauté
- 2 Tbs Soy Sauce
- Juice from 1/2 a Lemon
- Black Pepper to taste
- Cayenne to taste
- Sprouts for serving
- Sesame Seeds for serving
Instructions
- Begin by cooking your pasta until al dente. When done, drain and set aside.
- Bring a drizzle of avocado oil (or other neutral vegetable oil) to medium heat in a skillet. Add in the sliced carrots and broccoli florets, and sauté for 5-10 minutes, or until browned and softened.
- While the veggies are sautéing, mix the soy sauce, lemon juice, black pepper, and cayenne together in a separate bowl. Whisk together with a fork until well blended.
- Then, add in the cooked pasta to the pan with the veggies. Add in the sauce and stir-fry for an additional 1-2 minutes.
- When done, serve with sprouts and sesame seeds (if you’d like).
