Sun-Dried Tomato Hummus

This is the best Sun-Dried Tomato Hummus that you can make at home! Made with lemon, tahini, garlic, and savory spices.

Ingredients

  • 1 15 oz Can Chickpeas
  • 1/2 Cup Sun-Dried Tomatoes in Oil
  • 2 Tbsp Oil from Sun-Dried Tomatoes Jar
  • 2 Cloves Garlic
  • 2 Tbsp Lemon Juice freshly squeezed
  • 1 Tbsp Tahini
  • 1 Tsp Paprika
  • 1/4 Tsp Cumin
  • 1/4 Tsp Smoked Paprika optional
  • 1/2 Tsp Salt
  • Black Pepper to taste
  • Herbs for garnish, optional
  • 2 Tbsp Chopped Sun-Dried Tomatoes for garnish, optional

Instructions

  • First, mince the garlic and put into a small bowl. Add 2 tbsp of freshly-squeezed lemon juice into the bowl and let sit for at least 5 minutes.
  • Open your can of chickpeas and drain the liquid. DO NOT rinse - you want a little of the aquafaba (chickpea brine) still on the chickpeas.
  • To a food processor, add in all of the ingredients (including the garlic and lemon). Process on high until hummus is smooth and creamy, scraping down the sides if necessary to make sure everything gets processed.
  • Taste, and adjust seasoning if necessary.
  • Serve hummus in a bowl garnished with extra oil, chopped sun-dried tomatoes, and herbs (if desired).
  • Enjoy!

Notes

If needed, add up to 1 tbsp of water to the hummus to ensure smoothness.
