Living in the U.S., we’re really rushed into autumn once it hits July. That’s when you start to see most stores coming out with Halloween decor, scented candles, and pumpkin spice everything. Usually I’m a fan of this, but for whatever reason this summer I’ve been truly savoring every moment of the season. Probably because this has been a relatively mild summer here in Connecticut compared to past years. I’m NOT a fan of the heat, so this summer has been more manageable! Plus, we’ve had lots of rain, so our lawn and garden haven’t been dehydrated to a crisp!
This Sun-Dried Tomato Hummus is a perfect summer to fall transition recipe. It uses late summer tomatoes as a garnish, but the base has jarred sun-dried tomatoes and warm spices like paprika and cumin. I also topped this with fresh herbs from my garden, like thyme. You can add on any other herbs you like, such as basil, chives, or oregano! Tomatoes go so well with herbs, so you can’t go wrong! I hope you love this recipe as much as I do!

What are sun-dried tomatoes?
Sun-dried tomatoes are just regular tomatoes that have been dehydrated out in the sun, then are packed in olive oil to retain a softer texture. I only recommend using sun-dried tomatoes packed in olive oil because I find their flavor to be the best. Sun-dried tomatoes that aren’t submerged in olive are very hard and chewy – not ideal for this recipe!
Are sun-dried tomatoes good or bad for you?
Sun-dried tomatoes are very healthy! They contain high amounts of lycopene, an antioxidant found in tomatoes that has been linked to heart health. However, most jarred sun-dried tomatoes come packed in oil. If you’re looking to reduce your fat consumption, be sure to remove the tomatoes and pat with a dry paper towel to remove any excess oil.
What can I use as a topping for hummus?
In this recipe, I topped the hummus with extra sun-dried tomatoes, fresh garden tomatoes, herbs, black pepper, chili flakes, and an extra drizzle of olive oil. However, you can add on any herbs you like! Other delicious toppings could include:
- Castelvetrano olives
- Feta or freshly-grated parmesan
- Cucumber salad
- Extra chickpeas
- Tahini
- Pine nuts or any nuts you like
- Pickled onions or cornichons
What do you eat with tomato hummus?
Sun-dried tomato hummus would be delicious with the classic pita, but it would be DELISH served with grilled cheese! For my vegan friends out there, try it spread on this vegan potato wrap!
What is typically served with hummus?
Hummus is typically served with warm pita bread. However, I love eating hummus with pita chips, tortilla chips, and crudité like carrots and sliced peppers.
Can you make sun-dried tomato hummus without tahini?
You can, but I really recommend adding tahini because 1. it’s a traditional ingredient, and 2. it adds a delicious nutty flavor! If you don’t like sesame or are allergic to it, try subbing sunflower or cashew butter instead. I don’t recommend using peanut butter though – it has too strong of a taste.
Sun-Dried Tomato Hummus
Ingredients
- 1 15 oz Can Chickpeas
- 1/2 Cup Sun-Dried Tomatoes in Oil
- 2 Tbsp Oil from Sun-Dried Tomatoes Jar
- 2 Cloves Garlic
- 2 Tbsp Lemon Juice freshly squeezed
- 1 Tbsp Tahini
- 1 Tsp Paprika
- 1/4 Tsp Cumin
- 1/4 Tsp Smoked Paprika optional
- 1/2 Tsp Salt
- Black Pepper to taste
- Herbs for garnish, optional
- 2 Tbsp Chopped Sun-Dried Tomatoes for garnish, optional
Instructions
- First, mince the garlic and put into a small bowl. Add 2 tbsp of freshly-squeezed lemon juice into the bowl and let sit for at least 5 minutes.
- Open your can of chickpeas and drain the liquid. DO NOT rinse – you want a little of the aquafaba (chickpea brine) still on the chickpeas.
- To a food processor, add in all of the ingredients (including the garlic and lemon). Process on high until hummus is smooth and creamy, scraping down the sides if necessary to make sure everything gets processed.
- Taste, and adjust seasoning if necessary.
- Serve hummus in a bowl garnished with extra oil, chopped sun-dried tomatoes, and herbs (if desired).
- Enjoy!
