Vegan Pumpkin Curry

This easy, healthy vegan pumpkin curry is perfect for fall! With only a handful of ingredients, you'll have a delicious meal on the table in no time!

Ingredients

  • 1 Medium White Onion diced
  • Neutral Vegetable Oil for sauté
  • 2-3 Cloves Garlic minced
  • 1 15 oz Can Chickpeas rinsed and drained
  • 1 15 oz Can Pumpkin Purée
  • 2 Cups Vegetable Broth
  • 2 Tsp Curry Powder
  • 1 Tsp Turmeric
  • 1/2 Tsp Salt
  • 1/2 Tsp Black Pepper
  • 1/4 Tsp Cayenne
  • Juice from 1/2 a Lemon
  • Parsley for serving
  • Brown Rice for serving

Instructions

  • Bring a drizzle of neutral vegetable oil to medium heat in a large pot. Add in the diced onion, and sauté for about 5-10 minutes.
  • Then, add in the minced garlic and sauté until fragrant, about one minute.
  • Then, add in all the other ingredients and stir or whisk until evenly combined. Simmer for about 20-25 minutes, partially covered, or until chickpeas are soft and curry has thickened.
  • When done, serve with brown rice and parsley.
  • Enjoy!
