A round-up of the Best Easy Vegan Lunch Ideas! This list will have something for everyone :)
Hi everyone!! I thought I’d do something a little different today, and create a roundup of my favorite easy vegan lunch ideas. Everything here is either quick, super simple, or perfect for a lunch on the go. And, of course, everything is healthy, delicious, and nutritious!
1. My Favorite Vegan Wrap
I LOVE this wrap. The potatoes are really the star, and you can customize it with your favorite sauces. I used guacamole and barbecue sauce, but other combinations would be great – like ranch and hot sauce, or hummus and vinaigrette!
2. Vegan Buddha Bowl
This bowl is a Well and Full fan favorite! With over 20 five-star reviews, this recipe is sure to be a hit for your lunchtime meal.
3. Healthy Brown Rice + Kale Salad
This recipe is one that actually tastes better and better the longer you let it sit. Super healthy, flavorful, and really easy to make! This is a salad that I make time and time again at home.
4. Buffalo Chickpea Wraps
This recipe is super delicious on the go, and who can say no to tangy ranch + hot buffalo sauce? These wraps are a winner!
5. Moroccan Lentil Stew
This stew is absolutely PACKED with plant-based protein – and delicious, spicy flavor. I love making this stew! And it’s worth mentioning that I used to be skeptical of Moroccan spices, but now I’m a total convert.
6. Winter Kale Falafel
These healthy, easy kale falafels are the perfect bite-sized lunch. Serve with hummus or a chipotle tahini sauce – just add tahini, a little water, a squeeze of lemon juice, and then salt and chipotle powder to taste.
7. Vegan Power Bowl
This vegan power bowl is a yummy medley of flavors and textures, and is super nutritious at that. Plus, it’s packed with plant-based protein from the chickpeas and quinoa!
8. Spicy Kale Soup
This healthy, balanced kale soup is the perfect meal to eat in a freezing office. Serve with pasta to make a heartier soup!
9. Lemon Herb Pasta + Asparagus
This is more of a spring recipe, but you could probably sub in a more seasonal veggie for the asparagus! Or you could even just make the pasta on its own – it’s one of my favorite recipes!
10. Rainbow Rice Bowl
This bowl is killer, and the turmeric tahini really makes it special. Packed with flavor, it’s super easy to make and nutritious besides!
