
This Valentine’s Day Lemonade Spritz is the perfect mocktail for two! Made with brown sugar simple syrup and red currants, it’s sweet, a little tart, and festively pink. And because it’s made without alcohol, it’s also fun for kids!
In 2025 I did a lot of work with a sparkling water brand making mocktails. Prior to this work, I had never been much into mocktails. I mean, what’s the point? At least, that’s what I thought. But after making some of their recipes, I realized that mocktails can be SUPER delicious, and there are so many ways to be creative with them! Pair a homemade mocktail with a cute wine glass, and you’ve got a drink that is special moment-worthy without the possible hangover 😂. So with that, let’s get into this lemonade!
This recipe was inspired by some absolutely gorgeous red currants I found at Whole Foods. While they’re not technically in season right now above the equator, what fruit could be more romantic? Of course, I know that currants aren’t always available at every grocery store, so check the recipe notes on how to make this with other fruits. Enjoy!!

Valentine’s Day Lemonade Spritz
Equipment
- Cocktail Shaker
Ingredients
Brown Sugar Simple Syrup
- 1/4 Cup Water
- 1/3 Cup Brown Sugar
Valentine's Day Lemonade Spritz
- 1/3 Cup Red Currants see notes
- 1 oz Brown Sugar Simple Syrup see notes
- 3/4 Cup Lemonade see notes
- A Squeeze of Fresh Lemon Juice optional, but it MUST be fresh
- Lemon Sparkling Water or Seltzer to top
Instructions
- To start, make the brown sugar simple syrup. Add the brown sugar and water to a small saucepot, and bring to a simmer, stirring frequently. Once the mixture is simmering, turn off the heat and keep stirring until the sugar is completely melted. Then, pour your syrup into a heat-safe container to help it cool.
- To prep the currants, wash them and dry them, then pick them off their stems. Then, add them to a cocktail shaker and muddle them with a muddler or a large spoon.
- Now, add the cooled brown sugar simple syrup and lemonade (and a squeeze of fresh lemon juice, if using) to the shaker. Add ice, then shake until the cocktail shaker is ice cold, about 30 seconds.
- Pour the lemonade mixture evenly into your glasses. Top with lemon sparkling water, and garnish with more currants.
- Enjoy!
Notes
- If you can’t find red currants, use raspberries instead. However, raspberries are much less sour and acidic than currants, so reduce the simple syrup amount to 1/2 oz if using them.
- Use homemade lemonade or the best-quality lemonade you can find for this recipe. If your lemonade is too sweet or not lemony enough, add a squeeze of fresh lemon juice to the cocktail shaker to liven it up.
- I highly recommend using a cocktail jigger to measure the ingredients. However, if you don’t have one, here are the liquid conversions:

Can I make this Valentine’s Day Lemonade ahead of time?
You can prep the individual ingredients ahead of time, and even mix the brown sugar simple syrup, lemonade, and currants. But I don’t recommend adding the sparkling water until the very end, so that it doesn’t go flat!!
How long does this mocktail last in the fridge?
If making ahead of time, the simple syrup will last about 5 days in the fridge, and the blended mocktail will last about 2 days for best freshness and quality.
