Who else thinks that fall is the best time of the year? The air is crisp, the sweaters are cozy, and the drinks are hot. What time could be better? Plus, it’s hiking season! Let’s go!!
This year I wanted to round up the best vegan fall recipes I have to offer. From savory eats to sweet treats, this list will have something fun for the whole family to enjoy!
1 // Autumn Pumpkin Apple Stew
This is one of my most favorite recipes that I’ve ever created. If you’ve ever wondered what the word “cozy” would look like in recipe form, this stew is it! Plus, the sweet and savory flavors really shine here. There couldn’t be a more autumn-ier recipe than this!!
2 // Vegan Pumpkin Spice Latte
You can feel good drinking this pumpkin spice latte because it’s made with real, whole food ingredients! No artificial flavors here! I’ve had the Starbucks latte, and this one is way better (I promise!!).
3 // Pumpkin Apple Overnight Oats
This recipe is as if your grandma made the best pumpkin apple pie, but then delivered it in overnight oats form. My grandma, on the other hand, let me eat Lucky Charms and Sprite for breakfast!! ;) Unfortunately she is no longer with us in person, though she is forever in my heart. I have so many memories of my mom and grandma cooking our Thanksgiving pies for us every year, and these oats are in the spirit of this memory.
4 // Apple Chai Latte
This recipe combines two of my favorite things – cozy chai lattes, and apple cider. Could there be a more delicious combo?? I think not! This drink is perfect for those chilly fall nights – especially when made with apple cider from your local apple orchard!
5 // Autumn Pumpkin Pasta
This is a seriously underrated recipe, in my humble opinion! The pumpkin sauce is made with tomatoes, lots of garlic, and olive oil for a really tasty bite. Add this to a bowl of spaghetti and you’re set for dinner!
6 // Spicy Chipotle Pumpkin Hummus
To me, sweet sugar pumpkins are just begging for smoky, spicy flavors. This hummus delivers on that! I love to eat it with whole grain pita chips, or even spread on toast!
7 // Harvest Pumpkin Beer Stew
Because we all could use some beer in our food, right? I know I sure could! This stew is full of big, Tex-Mex flavors, but with that hint of hoppiness from the IPA. My boyfriend loves to eat this stew while watching football!
8 // Vegan Pumpkin Gnocchi
This recipe is a lot easier than you think it might be. The dough takes minutes to throw together, and the rolling takes not much longer! These are great boiled, then crisped up in the pan with a little olive oil or pesto. But any sauce would work on these doughy bites of goodness!
9 // Chipotle Sweet Potato Bowl
This sweet potato bowl is more reminiscent of the “normal” type of recipes I post here. (read: vegan buddha bowls). I love this one for fall because the sweet potato is so tasty when it’s roasted, and I love that smoky sauce!
10 // Epic Pumpkin Tacos
If you’re bold enough to break down a pumpkin, this one’s for you! If not, this recipe also works with sweet potatoes or other roast-able forms of squash. The key is in the toppings – add on as many as you like!!
11 // Vegan Pumpkin Mac and Cheese
This may be the coziest recipe ever. That’s right, I went there ;) This mac and cheese is creamy, cozy, and next-level with a crunchy and cheesy sunflower crumble topping!
12 // Creamy Vegan Pumpkin Soup
I love this soup because it’s so easy to make, but with a huge flavor payout! Pumpkin and chili is a delicious flavor combination, and I know you’ll love it in this soup!
13 // Vegan Pumpkin Beer Chili
Is putting beer in your food a good idea? I certainly think so! The hoppiness of the IPA comes through beautifully in this vegan pumpkin beer chili.
