Amazing Vegan Bacon Ranch Pizza! You won’t believe this recipe is made with whole food, plant-based ingredients. The perfect comfort food!
Hi folks! This is going to be my last post for possibly two weeks, because I’m getting surgery on Thursday. A few posts back I talked about how I was diagnosed with a bone disease, and this surgery is to correct that issue. I’m a little nervous, but I’m trying to stay positive because I know I have the best possible doctor to do this procedure. Here’s to hoping that the recovery time will be short and relatively painless!!
I have some big changes coming in my life in the next few weeks. This surgery is a big one, and there’s also an issue that will (hopefully) be resolved in October. Once these two items are out of the way, I’m hoping and praying for a peaceful and joy-filled fall and winter season. This is my favorite time of the year, and I just want to spend it with my boyfriend, family, and dogs.
Last fall, I talked on my blog about how as you get older, your life sort of pares away to the important things and relationships. At 25, I find myself much more selective about the things I choose to spend my time on. Before this realization, I was more of a “yes-man” and went along with things that I was not comfortable doing or experiencing. And I think it’s important in life to push yourself out of your comfort zone, because there are certain things you should do that may not necessarily be what you want to do at the time. But there is such a thing as being a pushover, and I’m finally at the point where I’m confident to say “no” to things that do not serve me.
So here’s to making time for the important things, saying no to the things that aren’t, and Vegan Bacon Ranch Pizza!
This recipe came about because I was craving some serious vegan “junk” food. However, when I eat actual junk food I often feel absolutely terrible afterwards. So I racked my brain to come up with a way I could eat something super satisfying, without sacrificing on the healthy aspect of things. Behold, this pizza. It’s made with healthy, whole food ingredients, but tastes like pure comfort. The base is a whole wheat pizza crust topped with marinara sauce, then add on some coconut bacon, avocado ranch, and kale. Let me tell you, this avocado ranch is SO GOOD. It tastes amazing on this pizza! I hope you all love this recipe as much as I do :)
Vegan Bacon Ranch Pizza
Ingredients
The Pizza
- 1 Lb Whole Wheat Pizza Dough
- Your Favorite Marinara Sauce
- 1 Recipe Vegan Coconut Bacon link in notes
- 1/2 Red Onion sliced
- 1 Green Bell Pepper sliced
- Chopped Kale
Vegan Avocado Ranch
- 1 Avocado pitted
- 1/2 Jalapeño ribs and seeds removed
- 1 Clove Garlic
- 1/4 Cup Water
- Juice of 1/2 a Lime
- 2 Tbs Olive Oil
- 1/2 Tsp Salt or more to taste
- Black Pepper to taste
- 1/2 Tsp Dried Parsley
- 1/4 Tsp Dill or more to taste
- More water to thin if needed
Instructions
- Begin by making the coconut bacon.
- After making the coconut bacon, bring the oven to 425 degrees F.
- Spread out your pizza dough onto a pan until it’s 1/4-1/2 inch thick. Add on a layer or your favorite marinara sauce (as much as you like), then add on the sliced red onion and green bell pepper.
- Bake pizza in the oven for 20-25 minutes.
- While pizza is baking in the oven, make the avocado ranch sauce. Add all ranch ingredients into a blender, and blend on high until smooth and creamy. Add in a little extra water to thin the sauce, if you need to. Taste, and adjust seasonings to your preference.
- When pizza is done, add on your toppings – the coconut bacon, a drizzle of the avocado ranch, and the chopped kale.
- Cut into slices and enjoy!
