This vegan kale detox salad is packed with healthy, nutrient-dense ingredients, and is the perfect meal for your detox or cleanse!
I am adding this note to the beginning of all my detox recipes. There is no such thing as a “detox”, as the word is used colloquially. The human body naturally removes toxins through the liver, kidneys, digestive system, and other pathways – no juice cleanses required. However, I like to use the word detox in my recipes because of its connotations – starting fresh, eating nutritious food, and helping your body be its healthiest self. I hope you enjoy these recipes!
HAPPY 2019!!!
I am SO excited to start of this new year with a series of great healthy eating recipes, like this vegan kale detox salad. 2018 was a really hard year for me for sure. But in 2019 I am ready to detox my life by limiting junk food, cutting out negativity, and focusing on all of the things I have to be grateful for. For this post today, I wanted to share my list of new year’s resolutions with you:
1 // Be kinder.
Let me preface this by saying that I’m not an unkind person. But I’m impatient, and a series of really bad events in 2018 have led me to be a bit of a negative downer. The biggest area where I struggle with this is while driving. I get so frustrated seeing people driving slowly in the passing lane, or cutting me off on the highway. But this is something where I just need to learn to LET GO. Holding on to anger or impatience only hurts me. In 2019, I am committing to living with more grace in my life, and to be more understanding and patient with others.
2 // Challenge yourself culinarily.
On my Instagram page in 2018, I started posting more of my everyday meals. But in doing so, I noticed that I eat a lot of the same thing. I haven’t really been challenging myself in creating new recipes or using different ingredients. This is something I want to change in 2019. There are SO many exciting ingredients and herbs and spices to use, and I’m looking forward to being more adventurous with my cooking!
3 // Go slower.
I get my streak of impatience from my late grandpa. I’m always in a rush, even when there’s no reason to be. I walk at a freakishly fast pace (don’t get in my way at the grocery store) and I rarely stop to smell the roses, so to speak. My goal in 2019 is to take more time to do things slowly and well. Unless I am actually late or behind on something, there is no need to rush through anything.
4 // Work smarter.
This goal builds off of my previous goal of going slower. I was just telling Jon last night how when I’m home during the day, I race through my recipe development and my blog’s administrative tasks. I work at a crazy fast pace and I always finish hours before I need to. Then I’m left with all these empty time where I have nothing to do! The worst part is, I didn’t even realize I was doing all this until I sat down to reflect and make my 2019 goals. So this year I’m committed to working equally as hard and being just as productive, but being smarter about my time choices and letting myself take the time to do things right.
5 // Focus on others.
As I referenced in an earlier post, 2018 was a very hard year for me. A few really traumatic things happened, one after the other, and I really took a hit, mentally and physically. I spent so much time just trying to survive and get by that I didn’t have the energy to focus on my relationship with Jon or my friendships. In 2019, I want to really see if I can think of others more, and to be more selfless in my relationships.

Vegan Kale Detox Salad
Ingredients
Broccoli + Chickpeas
- 1 Head Broccoli cut into florets
- 1 15 oz Can Chickpeas rinsed and dried
- Drizzle of Neutral Vegetable Oil
- 1/2 Tsp Salt
- Black Pepper to taste
- 2 Tsp Dried Parsley
- 1 Tsp Dried Basil
Green Goddess Dressing
- 1/3 Cup Tahini
- 1/3 Cup Water
- 1/2 Tsp Salt
- Juice from 1/2 a Lemon
- 1 Clove Garlic
- 1 Tbs Fresh Basil
- Black Pepper to taste
The Rest of the Salad
- 1 Green Bell Pepper sliced
- 4-5 Cups Curly or Lacinato Kale packed
- Hemp Seeds optional
Instructions
- Preheat your oven to 425 degrees F.
- In a bowl or on a baking sheet, toss your broccoli florets + rinsed and dried chickpeas with the oil, salt, and spices, until they’re evenly coated.
- On a baking sheet lined with parchment paper, bake broccoli and chickpeas for 25-30 minutes.
- While the broccoli and chickpeas are cooking, make the dressing. Combine all ingredients into a blender and blend on high until smooth and creamy. Taste, and adjust seasonings if necessary.
- When everything is done, assemble the salads. Add on a layer of kale and green bell peppers, then top with the broccoli and chickpeas. Drizzle everything with as much dressing as you like, and top with hemp seeds.
