This Summer Strawberry Salsa is the perfect summer food! Made with farm-fresh strawberries, and packed with lots of zesty flavors.
Here for week two of my new posting schedule! It’s definitely been easier to post on Tuesdays and Thursdays so I can have the entirety of Monday and Wednesday to work. I’ve been really trying to put out some great content, and starting this summer I will definitely be including some lifestyle posts (in addition to recipe posts! Those will never go away!!), including plant-based, natural skincare recipes and DIYs, eco-friendly hacks, and low-impact living tips.
I’ve been talking about this shift in direction on my Instagram captions lately, but I haven’t really shared much on the blog. Before, I had really been letting the Instagram algorithm dictate the type of content I was putting out. And while it is true that I eat a LOT of salads and vegan buddha bowls, I don’t want my entire feed to be all about that. There is so much more to my kind of food than salad lol!!!
You know, this is kind of hard for me to share, because I’ve always been self-conscious about my tendency to let external forces pressure me or influence my decisions. I honestly haven’t always had the courage of my convictions. There were so many things I wanted to do in life, but I went with other choices that I knew would make others happy. I’m getting MUCH better about it now, but when I look back on much of my time on Instagram, I realize that I was stuck in my old habit. Except this time it wasn’t a person telling me what to do, it was an algorithm. But a lesson learned a little later than you would’ve liked is no less valuable! I feel so much more confident in the work I’m doing now, and I’ve really been expanding my creative limits. I definitely want to show my versatility as a food stylist, recipe developer, and photographer. Untethered by the limiting influence of Instagram, the sky’s the limit now :)
Try this salsa with my vegan black bean burgers!
Summer Strawberry Salsa
Ingredients
- 2 Cups Chopped Strawberries
- 1/2 Jalapeño diced
- 1/4 Red Onion diced
- 1/4 Cup Cilantro chopped
- 1 Tsp Honey
- Juice from 1 Lime
- 1/4-1/2 Tsp Salt to taste
Instructions
- To begin, prep all your ingredients. For a spicy salsa, dice the jalapeño and use a little bit of the inner ribs and seeds. For a milder salsa, remove the ribs and seeds.
- Once your strawberries, jalapeño, red onion, and cilantro are finely chopped, mix them all together in a bowl with the honey and lime juice.
- Let the salsa rest in the fridge for 15-30 minutes, to allow the flavors to develop. (You can definitely eat it immediately, but it won't taste as good!!)
- Serve the salsa with your fave tortilla chips, on top of tacos, or on your favorite veggie burger.
- Enjoy!
