It’s officially fall!! Goodbye interior car heat that approaches the temperature of the sun; goodbye sunburn just from going outside for 30 seconds. It’s finally time for chilly nights, football, hot chai lattes, and apple cider everything!
In honor of fall, I’m putting together 10 of my best Fall Dinner Recipes. There’s a little something for everyone here, including my vegan and gluten-free folks! Cheers!

1 // Autumn Dense Bean Salad
I’m all about dense bean salads here at Well and Full, and this autumn version with a chipotle vinaigrette is a can’t-miss recipe! Plus, in the recipe post, I go over how it’s cheaper to get protein from beans rather than most animal proteins! (Send this to your plant-skeptic uncle, we all have one.)

2 // Creamy Pumpkin Risotto
Risotto is waaaayyyy easier to make than you’d think. I promise. I mean, you get to crack open a bottle of wine – and not all of it is used in the recipe. You know what I’m sayin’? ;) Seriously though, it’s so zen to put on your fave music, sip on some wine, and stir your risotto!

3 // Butternut Squash Cashew Korma
This is a very non-traditional spin on korma, inspired by Brooklyn Delhi’s line of Indian condiments. This recipe comes together in a flash, is made of wholesome ingredients, and is super cozy for fall nights.

4 // Butternut Squash Ginger Soup
This soup is creamy, dreamy, and the perfect thing to serve with grilled cheese! You can also add in some roasted chickpeas for texture as well!

5 // Vegetarian Butternut Squash Carbonara
This vegetarian take on carbonara swaps bacon for smoky, spice-roasted butternut squash. Add in some crispy fried sage, you’ll wonder why you haven’t been making carbonara like this all along!

6 // Pumpkin Minestrone
This is like if a dense bean salad was a soup. You’d never believe this recipe is accidentally vegan – it’s full of rich, savory flavor. Plus, it’s a breeze to make, with everything coming together in one pot.

7 // Hearty French Onion Stew (Top Rated Recipe + Vegan!!)
This is one of my most popular Thanksgiving recipes, and it’s top-rated as well! This French Onion Stew is SO hearty and filled with umami. It’s perfect as a cozy meal on its own, but it’s also super delicious served on top of mashed potatoes!

8 // Creamy Honeynut Squash Pasta
Honeynut squash has a gorgeous nutty, slightly sweet flavor, that lends itself so well to creamy pasta dishes. Made with butter and plenty of cheese, this pasta is the quintessential fall dish!

9 // Pumpkin Tomato Soup
This is one of my personal favorites on the blog! I mean, just look at the photo – this soup is SO thick and creamy. The original recipe is vegan (though you’d never know it), but you can make a vegetarian version with butter if you’d like! I’ve made it both ways and they’re both delicious.

10 // Vegan Pumpkin Nachos with Avocado “Queso”
Last but certainly not least! This is such a fun, unique recipe that’ll change how you see pumpkin! This is a vegan recipe, so instead of queso, you make an avocado “queso” with nutritional yeast (for cheesy flavor) and spices. Don’t knock it till you try it – these nachos are SO tasty and craveable!
