This is the perfect Summer Fruit Salad, with three types of seasonal berries, juicy oranges, and tropical pineapple mixed with a tangy honey lime dressing!
Coming in hot with another recipe for you this week! I spent some time yesterday cataloguing the recipes I’ve made recently, and I realized I have a HUGE backlog of amazing recipes that I need to post ASAP! So I’ll definitely be posting twice a week until the fall. Now that I think about it, this schedule will probably continue into fall because I am planning to have the fall-iest fall this year!! We’re talking pumpkin EVERYTHING, cozy baked goods, apple cider lattes, you name it!! I’m so excited for fall!!!
But, I’m still enjoying summer while I can! I made this summer fruit salad for myself a few weeks ago, and I thought, “Hey, this is pretty good – I should post it on my blog!”. But I’m kind of kicking myself because I didn’t include peaches in this recipe. Peaches are SO fresh and juicy in the summer! So I think I may make another fruit salad recipe including peaches, because I kind of feel obligated to LOL!
I thought I’d provide a small life update in this post! I’m feeling pretty good, honestly better than I’ve felt in years. For the first time since I graduated from college 5 years ago, I don’t feel weighed down by toxic mental health issues, bad relationships, and traumatic life experiences. My fiancé and I are really settling into our relationship, and we feel like we’re able to have fun in our lives. It’s all good over here :) Hope you’re doing well too :)
Summer Fruit Salad
Ingredients
The Fruits
- 2 Heaping Cups Strawberries halved
- 2 Cups Pineapple chopped
- 1 Cup Blueberries
- 1 Cup Blackberries
- 1 Orange
Honey Lime Dressing
- 1/2 Tbs Honey
- Juice from 1 Lime
Instructions
- First, wash, dry, and prep all of your fruit. For the orange, peel and remove as much pith as you can, then cut the segments in half (but feel free to supreme the oranges if you know how!).
- Then, mix the honey lime dressing. In a small bowl, whisk together the honey and lime juice with a fork until fully incorporated. Then, pour over the salad.
- Serve and enjoy!
Notes
- To make this recipe vegan, sub in maple syrup for the honey :)
- This fruit salad will keep in the fridge for about 2-3 days!
