Making your own fruit vinegar at home is incredibly easy! Learn how to make delicious, fruity Strawberry Vinegar with this seasonal recipe. It’s the perfect way to preserve that classic summer strawberry flavor when you’ve picked more strawberries than you know what to do with!

ย Every summer, without fail, I manage to amass 10+ lbs of strawberries at one of Connecticut’s pick-your-own strawberry fields. And of course there are few joys in life like fresh summer strawberries, but even a superfan like me can’t go through 10 lbs before they start to turn! So what to do with excess strawberries? Well, you can make barbecue sauce, salsa, oat-y crumble bars…. and you can make Strawberry Vinegar!

Making infused vinegars is so easy, it’s barely a recipe. But it’s worth it to have this recipe in your back pocket because it’s a way to have that strawberry flavor last for months. Since infused vinegars can last up to 6-8 months in the fridge, they’re the perfect way to preserve peak summer strawberries. (Because let’s be honest, off-season winter strawberries in the grocery store just don’t compare!) Enjoy!!

Ingredients

  • Strawberries

Instructions

  • Select a mason jar or similar vessel in which to infuse your strawberries. Then, purchase or pick a large enough quantity of strawberries that it will fill your jar nearly to the top.
  • Rinse your strawberries in water, then pat dry with a towel.
  • Add strawberries to your jar, then pour in white vinegar to the top until all strawberries are completely submerged.
  • Cover the jar with an airtight lid and put in the fridge for 5-7 days for infusion.
  • After 5-7 days have passed, strain the strawberries from the vinegar, then put the infused vinegar into a clean jar.
  • This vinegar will last in the fridge for about 6-8 months.
  • Enjoy!

Notes

  • For this recipe, regular distilled white vinegar is ideal, but you can also use white wine vinegar. The key is not to overpower the strawberry flavor, so avoid apple cider vinegar, balsamic vinegar, or red wine vinegar.

Strawberry Vinegar FAQs

How long does Strawberry Vinegar last?

Once infused and filtered, Strawberry Vinegar will last 6-8 months in the refrigerator!

How long do strawberries need to sit in vinegar for?

I’ve found that infusing them in the vinegar for about a week, or 5-7 days, is the best payout for flavor while not having to wait too much time for it to be ready! Of course, the longer you infuse the vinegar, the stronger the strawberry flavor will be. But a week is a good amount of time to get as much strawberry flavor as possible.

What is Strawberry Vinegar good for?

You can use homemade Strawberry Vinegar for:

  • Homemade salad dressings – combine 1/4 cup good olive oil, 3 tbsp strawberry vinegar, 1 tsp Dijon mustard, 1/2 tbsp honey, and salt and pepper to taste for an easy, small-batch vinaigrette!
  • In mocktails or cocktails – for an easy mocktail, add a few tablespoons over a glass of chilled sparkling water and add a spritz of fresh lemon juice!
  • Mix the strawberry vinegar with maple syrup for a sweet and sour syrup for ice cream or desserts!
  • Add it to homemade marinades for vegetables, meats, or even grilled fruit like peaches
  • Drizzled over salads for a vinegary bite, like this Kale and Strawberry Superfood Salad or this Melon Checkerboard Salad!
