Yesterday in CT it was 70 degrees outside – the most gorgeous spring weather. It’s supposed to be a little cooler today but I’m not complaining. Yesterday morning I was home at my parents’ house, and I was keeping my mom company in the garden, sipping a cup of coffee in shorts. I know, shorts in March!!! The dogs were outside with us, and my parent’s dog (Scout) was sprawled out on the deck in the sun like a cat. It was a very peaceful morning! My hometown is really an ideal place to be in the spring and summer months… we have a lovely garden and a big yard to play in with the dogs, and we’re lucky to live almost right next to the best farm stand in town. I just can’t wait for all the spring produce to be ready!!
I don’t do a whole ton of holiday-themed recipes here, but for some reason I was super inspired to make a healthified version of a Shamrock Shake in time for St. Patrick’s Day. The original Shamrock Shake is offered at McDonald’s, and has almost a cult-like following for some in America. It’s an artificially colored and flavored vanilla mint smoothie, which contains 820 calories for a large and 115 grams sugar (the recommended DV of sugar is 24-36 grams). Yikes!! I knew I could do better than that. This healthy, all-natural Shamrock Shake is authentically flavored with fresh mint, and is also naturally colored from the green avocado and mint. It’s super creamy and dreamy, and you definitely won’t miss its artificial counterpart.
Healthy Green Shamrock Shake
Ingredients
- 2 Avocados
- 1 Cup Almond Milk
- 1/4 Cup Fresh Mint packed
- 1/4 Cup Raw Agave Nectar
- 1 Tsp Vanilla Extract
- 5-6 Ice Cubes
Instructions
- Scoop out avocado into the blender. Add in all other ingredients, and blend on high until smooth.
- Serve and enjoy!
