Beat the summer heat with these fruity, boozy Aperol Spritz Popsicles! They’re the perfect little happy hour snack. All you need to do is combine Aperol, orange juice, and white wine, then freeze! Enjoy with friends for a summer party, or with dinner al fresco!


I don’t know what’s happened to me. I used to be one of those girls who went shopping for Halloween decor at TJ Maxx in, like, July. You’d see me break out the pumpkin spice candles and start making fall recipes in August. But now, I’m seriously holding on to summer! Especially here in CT, we have an abundance of late summer produce, like stone fruit, wax beans, and heirloom tomatoes. What’s not to love about that?

These Aperol Spritz Popsicles have summer written all over them. They’re fruity, refreshing, and just a little bit boozy! Aperol Spritz traditionally contains Aperol (obv), sparkling white wine like Prosecco, and club soda, with an orange slice for garnish. I modified that to create a popsicle-worthy recipe. For example, I switched out sparkling white wine for just regular wine. This is because sparkling wine does not do well in popsicles (trust me, I’ve tried). I also omitted club soda because there’s no need to dilute the mixture! Lastly, I added in orange juice in lieu of orange slices, for that refreshing orange flavor. I know you’ll love it, enjoy!!

Aperol Spritz Popsicles

Beat the summer heat with these fruity, boozy Aperol Spritz Popsicles! They're the perfect little happy hour snack.

Equipment

  • Popsicle Mold that can hold 6 popsicles
  • 6 Popsicle Sticks

Ingredients

  • 1 Cup Aperol
  • 1 Cup Freshly-Squeezed Orange Juice about 4 oranges
  • 3/4 Cup White Wine

Instructions

  • Juice your oranges (you'll need about 4) until you have 1 cup of juice.
  • Mix together the Aperol, orange juice, and white wine.
  • Add to your popsicle mold, then cover and add in the popsicle sticks.
  • Freeze the popsicles in your freezer for at least 8-10 hours (preferably overnight). Use the coldest setting on your freezer to make sure they freeze all the way.
  • When ready to serve, take the popsicles out of the molds. If they're stuck, try rinsing a little warm water over the popsicle molds.
  • Enjoy!

Notes

  • Since alcohol has a lower freezing point than water, make sure to set your freezer to its coldest setting.
  • You can use store-bought orange juice for this recipe, but fresh-squeezed tastes much better :)
