Linda’s Spinach Dip isn’t like any other spinach dip you’ve tried before! It’s a savory, flavor-packed dip you’ll make again and again! Even though the ingredients might sound surprising, like maybe they won’t work together, you’re in for a pleasant surprise with this recipe! This Spinach Dip is proof that in some recipes, the result is greater than the sum of its parts.


My best friend Alex and I have been friends since 2007, and her family is like my second family. Earlier this year, Alex’s parents hosted a get-together for us, our friend Kevin, and all of our significant others. We all got our wine, and Linda (Alex’s mom) put this dip down on the table. I looked at it and assumed it was spinach and artichoke dip, which is a favorite of mine. So I took a big piece of baguette and got a scoop of this dip, and OH. MY. It was unlike anything I’d ever tasted. It was so full of umami and complex flavor, and I immediately asked Linda what was in it. Imagine my shock when she said it was just frozen spinach, white onions, mayo, and blue cheese. I know, I know, this sounds like a bizarre array of ingredients. But this dip is great than the sum of its parts, believe you me.

I know a lot of people are going to see this recipe and maybe be put off if they don’t like raw onions, mayo, and/or blue cheese. Yes, this dip tastes like those things but the combination of them is truly out of this world. I wish I could deliver this dip to you so you could try it yourself. Alas, you will just have to take my word for it and make the recipe! Enjoy!! :)

Linda’s Spinach Dip

Linda's Spinach Dip isn't like any other spinach dip you've tried before! It's a savory, flavor-packed dip you'll make again and again!

Ingredients

  • 1 Lb Frozen Spinach defrosted and water squeezed out
  • 1/2 White Onion
  • 3/4 Cup Blue Cheese
  • 1/3 Cup Mayo or more, if needed
  • 1/4 Tsp Salt or more, to taste

Instructions

  • To begin, defrost your frozen spinach in the microwave. Once it's been thawed, wrap the spinach in a clean towel or paper towel and squeeze out all the excess water. Repeat if needed, until as much water is squeezed out as possible. (You can save this water for smoothies later on!). Put the spinach in a mixing bowl.
  • Chop up your white onion into small pieces, then add it to the mixing bowl. Add in the blue cheese, mayo, and salt. Mix until everything is well combined, then taste. Add more salt if you'd like.
  • Add the dip to a serving bowl. If you'd like to garnish it, add a drizzle of olive oil and a few herbs on top. If not, the dip stands on its own!
  • Enjoy!

Notes

  • Use frozen spinach for this recipe, not fresh!

Is eating spinach dip good for you?

 Well, health is all relative! This dip does have spinach, which is an antioxidant powerhouse. Onions are also a great source of prebiotic fiber. On the other hand, mayo is not super nutritionally-dense, but it’s not BAD for you either. So overall, I’d say this spinach dip can fit in with most any diet!

Is spinach dip better cold or hot?

I definitely recommend serving this dip at room temperature – that’s how the flavor will shine best!

How long does spinach dip last in the fridge?

This would keep best in the fridge for 2-3 days, or in the freezer for about a month. However, I don’t really recommend freezing it, because the texture won’t be as enjoyable.
